Uncle Wynn’s Bread Machine Rye
1 1/2 cups water
3 tablespoons honey
2 tablespoons olive oil
3 teaspoons caraway seeds
1/2 cup cornmeal
1 1/2 cups dark rye flour
2 cups unbleached bread flour
2 tablespoons vital gluten — (optional)
2 teaspoons active dry yeast
1 teaspoon salt
Place ingredients in the pan of the bread machine in the order suggested
by the machine’s manufacturer. Set for French Bread cycle, or Normal
setting.
This recipe yields a 1 1/2 pound loaf.
