SPAGHETTI

12 oz. tomato juice
1 lg. can mushrooms, stems and pieces
Salt to taste
Garlic to taste
Oregano to taste
Dehydrated onion flakes
1 lg. green pepper, diced
2 cans bean sprouts

Cook all ingredients in covered saucepan. Cook until mixture thickens. Add bean sprouts; simmer 10 minutes. Sauce will usually taste better after sitting over night in refrigerator.

SHRIMP MARINARA

* 1 (16 oz.) can of tomatoes, cut up
* 2 tbsp. minced parsley
* 1 clove of garlic, minced
* 1/2 tsp. dried basil
* 1 tsp. salt
* 1/4 tsp. pepper
* 1 tsp. dried oregano
* 1 (6 oz.) can tomato paste
* 1/2 tsp. seasoned salt
* 1 lb. cooked shelled shrimp
* Grated Parmesan cheese
* Cooked spaghetti
In a Crock Pot, combine tomatoes with parsley, garlic, basil, salt, pepper, oregano, tomato paste and seasoned salt. Cover and cook on low for 6 to 7 hours. Turn control to high, stir in shrimp, cover and cook on high for 10 to 15 minutes more.
Serve over cooked spaghetti. Top with Parmesan cheese.

CROCKPOT CHICKEN CACCIATORE I

1 large onion, thinly sliced
1 1/2 lb. skinless, boneless chicken breasts
2 (6 oz each) cans tomato paste
8 oz. fresh sliced mushrooms
1/2 tsp. salt
1/4 tsp. pepper
2 cloves garlic, minced
1 tsp. oregano
1/2 tsp. basil
1 bay leaf
1/4 c. dry white wine
1/4 c. water
Put sliced onion in bottom of crock pot. Add chicken pieces. Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs, white wine and water. Spread over chicken. Cover; cook on Low 7 to 9 hours (High: 3 to 4 hours). Serve chicken pieces over hot spaghetti or vermicelli. 4 servings.

Pasta Pizza

8 ounces angel hair spaghetti
1 tablespoon olive oil
1 teaspoon olive oil
1/3 cup chopped green pepper
1/4 cup chopped onion
1 1/4 cups low-fat pasta sauce
1/4 cup sliced black olives
1/2 cup shredded non-fat mozzarella
1/4 teaspoon Italian seasoning

Prepare angel hair pasta as directed on package. Rinse and drain. Set aside.

In 6-inch nonstick skillet, combine 1 teaspoon olive oil, green pepper and onion. Cook over medium high heat for 3 to 5 minutes or until vegetables are tender, stirring frequently. Set aside.

Heat remaining 1 tablespoon olive oil over medium high heat in 10-inch nonstick skillet. Spread angel hair pasta in skillet. Cook for 4 to 6 minutes or until lightly browned on underside. Turn pasta crust onto plate. Slip crust back into skillet browned-side-up. Reduce heat to medium.

Spoon sauce evenly over crust. Top evenly with prepared vegetables and the olives. Sprinkle with cheese and Italian seasoning. Cover and cook for 4 to 5 minutes or until cheese is melted. Cut pizza into wedges and serve.

CHICKEN CASSEROLE

1 can Rotel tomatoes with chilies
1 can cream of mushroom soup
1 sm. Velveeta cheese, diced
1 sm. onion, sauteed
1 stick margarine
1 whole chicken
1 c. Cheddar cheese
1 pack spaghetti

Boil chicken and take off bone. In the same water, boil spaghetti and drain, but do not rinse. Mix all ingredients together, except Cheddar cheese. Bake at 350 degrees until Velveeta cheese is melted and hot. Garnish with Cheddar cheese and serve.

Chicken Tetrazzine

1 tablespoon Margerine

3 cup Mushrooms — fresh –sliced

1/2 cup Onion — minced

1/2 cup Flour

2 1/3 cup Chicken broth

2 cup Skim milk

1/4 cup Cream cheese — light process

1/3 cup Parmesan cheese — grated –d

1/4 cup Sherry

1 teaspoon Garlic powder

1/4 teaspoon Pepper

2 Jars Pimiento — diced –drain

7 package Spaghetti–uncooked

2 1/2 cup Chicken — chopped cooked bre

Vegetable cooking spray

Melt margarine in large pan. Add mushrooms and onion and saute 6-7 mins or until liquid evaporates. Stir in flour. Gradually add chicken broth, skim milk and light process cream cheese. Bring to a boil for 5 mins. stirring constantly. Remove from heat and stir in 2 TBS Parmesan cheese and next 5 ingredients. Set aside. Cook spaghetti according to package directions after breaking into 4 inch pieces. Omit salt and oil from pot. Stir spaghetti and chicken into mushroom mixture. Spoon into a deep 3 quart casserole coated with cooking spray. Sprinkle with remaining Parmesan cheese. Cover casserole and bake at 350* for 20 mins. Uncover and continue baking for 10 mins more. Let stan 5 mins beafore serving.

CHICKEN TETRAZZINI

5 c. cooked, cubed, boneless chicken breast
2 c. sour cream
7 oz. pkg. skinners ready cut spaghetti
2 cans cream chicken soup, undiluted
8 oz. can mushroom pieces, drained
1 stick oleo, melted

White pepper to taste,1 c. grated (freshly) Parmesan cheese Combine all ingredients except cheese. It is not necessary to cook pasta, provided you put the ingredients
together a half a day before baking. Place mix in 13 x 9 inch casserole (greased). Can be frozen. When ready to bake sprinkle cheese over top. Bake at 350 degrees for 25-30 minutes or until bubbly. Serves 12.

MAXINE’S CHICKEN TETRAZZINI

Bake 1 chicken or use several chicken breast, boiled 3 c. chicken, chopped
1/2 c. pimento (4 oz. can)
1/2 c. green pepper, chopped
1 can cream of mushroom soup
1 c. chicken broth or more
1 tsp. salt
1 tsp. pepper
1 lb. Cheddar cheese, mild
8 oz. pkg. spaghetti, cooked

Mix all ingredients except half of cheese. Cover with foil. Bake at 350 degrees for 45 minutes. Remove foil and add remainder of cheese and heat until melted. This is great with a green salad and hot French bread.

All At Once Spaghetti

1 tablespoon cooking oil
1 large onion,chopped
1/2 lb ground beef
1 1/2 teaspoon salt
1 pepper to taste
2 can hunt’s tomato sauce
1 1/2 cup water
1/4 lb uncooked spaghetti
1 (1/2 - 8 oz. pkg.)
1 grated cheese

Heat oil in saucepan or skillet. Add onion; cook until soft. Crumble in the beef. Stir and fry until meat loses red color. Sprinkle with salt and pepper. Pour in tomato sauce and water; bring to boil. Break spaghetti; sprinkle in a little at a time, stirring into sauce and keeping it separated. Cover tightly. Simmer 20 to 30 minutes. Stir toward end of cooking time. Serve with cheese. Makes 3 to 4 servings.

Campers Pizza Pie

8 pizza or spaghetti — %
1 wheat bread
1/4mozzarella cheese
pepperoni

Using the pie iron,take two slices of bread,put 1 1/2 tablespoon s pizza sauce on one slice of bread.Top with Mozzarella cheese and sliced pepperoni.Place other side of bread on top and butter outer sides of bread.Put sandwich into pie iron and place in coals of fire.Cook until bread is toasted.

Butterfly Bites

2 Stalks of celery
12 lg Three-ring pretzels
6 tb Peanut butter or cream cheese
About 18 raisins or currents
12 Slivered almonds or enoki mushrooms

Wash the celery. Using plastic knives, cut the celery into thirds. Fill each celery stalk with one tablespoon of either peanut butter or cream cheese. For the wings, gently push 1 pretzel into the filling, running parallel to the length of the celery stick. Do the same on the celery’s other lengthwise side. Arrange the raisins or currents as the eyes, nose and mouth. For antennae, push the slivered almonds or mushroom cap into filling. If using mushrooms, arrange the spaghetti-like mushroom tips upward, like an antenna.
