The Best Bread Machine Sourdough

1            package  yeast
2 1/4            cup  bread flour
1         tablespoon  sugar
1         tablespoon  oil
1           teaspoon  salt
4         tablespoon  Lora Brody’s Sourdough Bread Enhancer
1                cup  sourdough starter
1/2           cup  warm water

Place all in the bread pan in the order recommended by your machine’s
manufacturer.  Process on the White Bread cycle.

This recipe yields a 1 1/2 pound loaf.

Honey Nut Oatmeal Sourdough Bread

3/4 cup healthy active sourdough starter
3/8 cup water
1 1/2 tablespoons walnut oil
3 tablespoons honey
3/4 teaspoon salt
2/3 cup quick-cooking oats
3 cups bread flour
1 1/2 teaspoons active dry yeast
1/2 cup chopped walnuts

Place all ingredients (except walnuts) in your machine in the order
recommended by your machine’s manufacturer. Select the French or
Basic/White cycle and press start. During the last 10 minutes drop in the
walnuts. If your machine has an add-in beep add them at that time.

This recipe yields 1 loaf.

Caesar’s Sourdough Bread Abm

2 1/2 teaspoons yeast
2 cups bread flour
1 cup whole wheat flour
1 1/2 garlic cloves — crushed
1 1/2 tablespoons sugar
1/2 tablespoon salt
1/4 cup parmesan — grated
3 tablespoons olive oil
4 anchovies — chopped
1/2 teaspoon lemon peel — grated
1 1/2 cups sourdough starter
1/2 cup water — warm

Bring all ingredients to room temperature and pour into bakery, in order.
Set “baking control” at 10 o’clock. Select “white bread” and push Start.

In hot & humid weather, use 1/8 c less water.

If Caesar made bread instead of salad dressing, this would be it.
Sandwich with lettuce and tomatoes or tuna salad, or serve it with a green
salad. For an hors d’oeuvre, toast slices and top with steak tartare or a
sliver of rare roast beef. The crusty ends can be cut into croutons,
toasted in a frying pan, and tossed in a salad.

INGREDIENTS

2 cabana sausages
2 tablespoons olive oil
1 teaspoon smoked paprika, optional
sourdough bread, sliced thickly
good quality Dijon mustard
mayonnaise
tomato sauce
beer of your choice, to serve

METHOD

Slice sausages in half lengthways and then into 10cm lengths. Preheat a char-grill pan until very hot.

Toss sausages in a large bowl with olive oil and paprika. Chargrill sausages on all sides for approximately 10 minutes or until browned, slightly crispy and heated through.

Brush bread with any remaining oil and grill on one side on same grill. The bread will warm through and absorb some of the flavours from the sausage oil on the grill pan.

Arrange sausages and bread on a clean bread board with little bowls of mustard, mayonnaise and tomato sauce to accompany.

Serve with beer of your choice.
