BARBECUE SAUCE
1 cup chopped celery
1 medium onion chopped
1 Tbsp. butter
Saute until golden brown.
2 Tbsp. vinegar
1 Tbsp. brown sugar
3 Tbsp. Worcestershire sauce
1 Tbsp. lemon juice
1 tsp. salt (optional)
1 tsp. mustard
1 cup ketchup
1 cup water
2 lbs. ground beef
Combine all ingredients in a large saucepan. Cook slowly for 2 -21/2 hours. (Is better reheated)
BARBECUE SAUCE FOR CHICKEN
2 c. vinegar
1/2 c. salt
1/2 stick of oleo
1 tsp. hot pepper
1/2 c. water
Cook all ingredients in saucepan until salt is dissolved and to a good rolling boil. Brush over chicken several times during barbecuing.
TURKEY BARBECUE
2 to 3 lb. turkey fillets
2 green peppers
1 teaspoon. celery salt
Dash of pepper
2 teaspoon. chopped onion
18 ounce thick barbecue sauce
Prepare turkey fillets with dash of pepper across tops. Bake in 350 degree oven for 1 hour covered.
Uncover for desired darker color. Prepare chopped green peppers, onions. Mix barbecue sauce, celery salt, (thin with water if needed) in 5 quart slow cooker/Crock Pot, set on high. Add green peppers and onions. Allow to heat while turkey is baking. Chop turkey (as desired in small tomedium chunks) and add to slow cooker/Crock Pot. Simmer for 2 to 3 hours, or turn to low and cook for 4 to 6 hours. Serve on fresh rolls.
Serves 4 to 6.
Buffalo-Style Crab Claws
1/4 cup butter — melted
1 1/2 teaspoons hot pepper sauce
1 teaspoon barbecue sauce
1 teaspoon lemon juice
1/4 teaspoon chili powder
1/4 teaspoon lemon-pepper
1/4 teaspoon celery salt
16 Alaska snow crab or blue — crab cocktail claws
blue cheese dipping sauce
3 tablespoons mayo
2 tablespoons nonfat plain yogurt
1 tablespoon blue cheese — crumbled
1 teaspoon parsley — chopped
1 small clove garlic — minced
3/4 teaspoon lemon juice
Whisk together all ingredients in a small bowl except claws and dipping sauce. Arrange claws on a broiling pan and brush both sides of each claw with butter mixture. Broil 5-6″ from heat for 3-4 minutes, or just until crab is hot. Remove from oven and brush with remaining butter mixture. Serve on a platter with the Dipping Sauce. Whisk all sauce ingredients together.
Easy Crockpot Barbecue
3 lb Pork roast; (up to 4)
1 lg Onion
8 Whole cloves; sliced, (up to 10)
Your favorite barbecue sauce
Before you go to bed, brown pork roast in skillet with a small amount of oil. Peel and slice 1 large onion. Place 1/2 onion in bottom of crockpot. Put roast in crockpot and add 1/2 to 3/4 cup water. Add rest of onion and cloves. Set on low. In morning, turn off crockpot, remove meat, and let cool. Discard onion and juices in crockpot. Tear roast into small pieces. Put back in crockpot and add barbecue sauce (enough until juicy). Cook on low 2 to 3 hours or until flavors are blended. Serve on buns.
BBQ Chicken Pizza
3 boneless chicken breast halves, cooked and cubed
1 cup hickory flavored barbecue sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) preābaked pizza crust
1 cup smoked Gouda cheese, shredded
1 cup thinly sliced red onion
Preheat oven to 425F. In a saucepan over medium high heat, combine chicken, barbecue sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.
Arby’s Barbecue Sauce
1 cup ketchup
2 teaspoons water
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon Tabasco pepper sauce
1. Combine all the ingredients in a small saucepan and cook over medium heat, stirring constantly, until the sauce begins to boil, 5 to 10 minutes.
2. Remove the sauce from the heat. Cover and allow to cool.
3. Pour into a covered container for storage in your refrigerator. Keeps for a month or two.
Makes 1 cup.
Berry Easy Barbecue Sauce
18 oz Barbecue sauce
16 oz Cranberry sauce, jellied
1/4 c Water
2 tb Brown sugar, packed
2 tb Chili powder
1/4 ts Garlic powder
1/4 ts Cloves, ground
Combine all the ingredients in a 2 quart saucepan. Bring to boiling; reduce heat and simmer for 10 minutes.
Brush on meat or chicken at end of grilling time.
Makes 3 1/2 cups of sauce - enough for 18 - 21 pounds of ribs.
