Fresh Apple Cake #5

3      cups          flour
2      cups          sugar
1/2  teaspoon      salt
1/2  teaspoon      soda
1 1/4  cups          cooking oil
1      cup           pecans
1      teaspoon      vanilla
2      medium        apples
3                    Eggs

Mix and sift together flour, sugar, salt and soda.

Peel and core apples.  Mix with chopped pecans.  Add to dry ingredients.

Make a “well” in the center.  Pour in oil and well beaten eggs.
Thoroughly mix and then add vanilla.

Bake in a greased and floured tube pan for 1 hour at 350 degrees.  Test
for doneness with straw.

Fresh Apple Cake #4

2                    Eggs
1      cup           butter
2      cups          sugar
4      cups          fresh apples — finely chopped
2 1/2  cups          flour
2      teaspoons     soda
1      teaspoon      salt
1      teaspoon      cinnamon
1      teaspoon      nutmeg
1      teaspoon      allspice

Combine eggs, butter and sugar.

Add chopped apples and let stand for 10 minutes.

Sift together all dry ingredients and add to apple mixture.

Bake in tube pan at 360 degrees for 45 minutes to 1 hour.

3      cups          chopped apples
2      cups          sugar
2                    Eggs
1      teaspoon      vanilla
2 1/2  cups          flour
1      teaspoon      salt
1      teaspoon      soda
1      teaspoon      baking soda
1      teaspoon      cinnamon
1 1/4  cups          oil
1      cup           pecans

Sift all dry ingredients together.

Add oil to dry ingredients, mix well.

Add apples and pecans.

Bake for 1 hour at 350 degrees.

1      teaspoon      baking powder
3      cups          chopped apples

Beat eggs, sugar and oil together.

Add remaining ingredients.

Bake  in loaf or tube pan for 1 hour at 325 degrees.

Note:  the dough will be real stiff.

3      cups          chopped apples
1      cup           pecans

Sift flour, sugar, salt and baking powder together.

Add oil and eggs.  Mix well.

Bake in tube pan at 325 degrees for 1 hour.

Make a glaze and pour over cake while still warm.

Apple Cake With Icing

3      large         eggs
1 1/2  cups          oil
2      cups          sugar
3      cups          flour
1      teaspoon      soda
1      teaspoon      salt
2      teaspoons     vanilla
1      cup           pecans
3      cups          cored, peeled, diced apples
4      ounces        (1 cube) margarine
1      cup           packed brown sugar
1/4  cup           milk

Mix all cake ingredients together and pour into 9 x 13-inch oblong pan.
Bake at 350 degrees F. for 45 minutes or until cake tester comes out clean
when inserted in center of cake. Cook icing ingredients in small saucepan
2 1/2 minutes and pour over warm cake.

Apple Cake

6                    apples; medium, tart
2                    lemons; medium, juiced
3      tablespoons   sugar
3      tablespoons   butter
3/4  cup           sugar
2                    egg yolks; large, divided *
1/2                lemon;juiced and peel grated
1      teaspoon      baking powder
1 1/2  cups          flour; unbleached
3/4  cup           milk
1      tablespoon    rum
2                    egg whites; large
1      tablespoon    butter; to grease cake pan
1      teaspoon      vegetable oil
3      tablespoons   confectioners’ sugar

*  Do not put the egg yolks together as they will be used individually.

Peel apples, cut in half and core.  Cut decorative lengthwise slits in
apples, about 1/2-inch deep.  Sprinkle with lemon juice and sugar.  Set
aside.  Cream butter and sugar together.  One at a time, beat in egg
yolks.  Gradually beat in lemon juice and grated peel. Sift baking powder
and flour together.  Gradually add to batter. Blend in milk and rum.  In a
small bowl, beat egg whites until stiff. Fold into batter.  Generously
grease a springform pan.  Pour in batter and top with apple halves.  Brush
apples with oil.  Bake in a preheated 350 degree F. oven for 35 to 40
minutes.  Remove from pan and sprinkle with confectioners’ sugar.

CROCKPOT APPLE CAKE DESSERT

6 apples peeled, cored and sliced
sugar
cinnamon
8 oz of yellow cake mix
1/4 c melted butter or margarine

Put slices of apples in CP. Pour half a package of dry cake mix over apples.
Drizzle butter over cake mix. Sprinkle cinnamon and sugar mixture over that and cook on low 1 1/2 to 2 hours. Keep checking and it’s done when the apples are soft.

FRESH APPLE CAKE 4

5 c. cut up apples
5 tbsp. sugar
3 c. flour
1/2 tsp. salt
4 eggs, beaten
1/4 c. orange juice
5 tsp. cinnamon
3 tsp. baking powder
2 c. sugar
1 c. oil
1 tbsp. vanilla

Mix cinnamon and sugar together. Pour over sliced apples and mix, set aside. Mix dry ingredients in sifter after sifting. Make well in middle of dry ingredients. Add last 4 ingredients. Beat together with wooden spoon. Grease bundt pan and put in 1/2 ingredients. Put in apples, add rest of dough and bake 1 hour 15 minutes at 375 degrees.

APPLE CAKE 9

2 c. sugar
1 1/2 c. cooking oil
2 tbsp. vanilla
2 eggs, well beaten
1 tsp. salt
Juice of 1/2 lemon
3 c. flour
1 1/2 tsp. baking soda
3 c. tart apples, peeled & chopped
1 1/2 c. nuts, chopped

Preheat oven to 325 degrees. Mix sugar, oil, vanilla, eggs, salt, and lemon juice; beat well. Sift flour and soda and add gradually to first mixture. Add apples and nuts; blend. Bake in a greased and floured tube pan for 1 1/2 hours. When cool, drizzle with a glaze made with 1 cup powdered sugar and 2 to 3 tablespoons lemon juice.

APPLE CAKE WITH CREAM CHEESE FROSTING

2 eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. peeled apples, diced
1 c. walnuts, chopped

Beat eggs until light and fluffy. Gradually add sugar, oil, and vanilla. Sift together next 5 ingredients and add to first mixture. Stir in apples and walnuts. Pour into a greased 13 x 9 x 2 inch pan, and bake in a preheated oven at 350 degrees for 45 minutes. Let cool in pan, then spread with frosting.

–FROSTING:–

1 (3 oz.) pkg. cream cheese, at room
temperature
3 tbsp. butter or margarine, softened
Pinch of salt
1/2 tsp. vanilla
1 1/2 c. confectioners sugar

Mix all ingredients together until they are smooth. Spread on cake.

ISRAELI APPLE CAKE

4 eggs
2 c. granulated sugar
1 c. cooking oil
1/4 c. fresh orange juice
3 tsp. vanilla
3 c. all-purpose flour
3 tsp. vanilla
1/4 tsp. salt
1 c. walnuts, chopped
2 c. cooking apples, peeled and
thinly sliced
1 1/2 tsp. powdered cinnamon
3 tsp. granulated sugar
Powdered sugar for dusting

In a medium bowl, beat the eggs, 2 cups of sugar, oil, juice, and vanilla with an electric mixer on high speed for 10 minutes. Sift together the flour, baking powder, and salt, then blend it, a little at a time, into the egg mixture and then stir in the walnuts. Preheat oven to 350 degrees. Grease a bundt pan and pour in about a third of the batter. Layer the top with half of the apples; sprinkle the top with 1 teaspoon of the remaining sugar and 1/2 teaspoon of the cinnamon. Pour another third of the batter on top and cover with the remaining apples; sprinkle the top with the rest of the sugar and cinnamon. Cover with the remaining third of the batter. Bake until done (75 to 85 minutes). Remove from oven and immediately dust with powdered sugar.

Makes about 16 servings. (Invert on serving plate before dusting with powdered sugar.)

FRESH APPLE CAKE 3

4 c. diced apples
2 c. sugar
2 tsp. cinnamon
1 tsp. soda
1/2 c. chopped nuts
2 eggs
1/2 c. salad oil
1 tsp. salt
2 c. flour

Dice apples in a bowl. Break eggs over the apples. Stir with spoon, add sugar, cinnamon, oil and nuts. Mix dry ingredients together and add to apple mixture, mix well and pour into a greased 9 x 13 pan. Top with mixture of 1/4 cup brown sugar, 1/4 cup white sugar, 1/2 teaspoon cinnamon and 1/2 cup chopped nuts. Bake at 350 degrees for 50 minutes.

APPLE CAKE 8

4 or 5 lg. cooking apples
3 c. flour
2 c. sugar
1 c. Wesson oil
4 eggs
1/4 c. orange or pineapple juice
3 tsp. baking powder
2 1/2 tsp. vanilla

Pare and slice apples, sprinkle with sugar and cinnamon, then set aside. Put all other ingredients in a large bowl and beat together for 10 minutes. Fold in half of the apples into the batter, put rest on top. Grease and flour a tube pan. Bake at 350 degrees for 1 1/2 hours or until done.

AUNT MARY’S APPLE CAKE

Mix in large bowl: 2 c. sugar
1 1/2 c. oil
3 eggs

Sift in together: 1 tsp. salt
1 tsp. baking powder
1 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3 c. flour

3 c. raw apples, sliced 1 1/2 c. nuts 1 tsp. vanilla Mix all ingredients and grease a 13 x 9 x 2 inch pan. Bake at 350 degrees for one hour. Make icing while cake is baking. Take cake out, cut into squares. Pour icing on top while hot.

–ICING:–

1 stick butter
1 c. sugar
1 1/2 c. evaporated milk or apple
juice or just add regular milk

Cook 2 1/2 minutes after it begins to boil. Add 1 teaspoon vanilla and spoon over cake.

QUICK APPLE CAKE

A rich buttery cake bakes up around apple slices place into the batter. A topping of chopped almonds and cinnamon sugar finishes the cake so it is ready to serve warm as it comes out of the oven. For a 9 inch round cake you will need: 1/2 c. butter or margarine, room
temperature
1/2 c. sugar
3 eggs
1/2 tsp. vanilla extract
1 c. all-purpose flour
1 lg. apple, pared, cored & cut into
1/4 inch thick wedges
1/4 c. sugar
1 tsp. cinnamon
3/4 c. almonds, coarsely chopped

Cream together butter and the 1/2 cup sugar. Add eggs and beat until fluffy. Stir in vanilla and flour, mixing well. Spread evenly in buttered 9 inch round cake pan. Place apple wedges into cake batter to form a circular pattern. Mix together 1/4 cup sugar and cinnamon. Sprinkle over cake. Sprinkle top with almonds. Bake at 375 degrees for 40 minutes or until a wooden pick inserted in the center comes out clean. Good served with: Scoops of vanilla or cinnamon-flavored ice cream.

APPLE CAKE 7

1 c. chopped walnuts
4 - 5 apples, peeled and diced
1 c. Crisco oil
2 c. sugar
2 tsp. vanilla
3 eggs, well-beaten
3 c. flour
1 tsp. salt
1 tsp. baking soda

Mix Crisco oil, sugar, eggs. Add dry ingredients. Add walnuts and apples. Bake at 325 degrees for 70 minutes in tube pan.

APPLE CAKE 6

3 c. plain flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 c. white sugar
1 c. brown sugar
2 eggs
1 1/2 c. salad oil
2 tsp. vanilla
1 c. pecans
3 c. apples

Sift twice the flour, soda, salt and cinnamon. Set aside. Beat eggs and sugar until creamy. Add oil and vanilla and beat until smooth. Add flour, mix well. Add pecans and apples. Bake at 325 degrees for 1 hour and 15 minutes.

–SAUCE:–

1/2 c. butter
1/2 c. milk
1/2 c. brown sugar

Boil 5 minutes. Spread on top and sides of cake.

APPLE CAKE 5

3 c. flour, sifted
1 tsp. soda
3 tsp. cinnamon
1 1/2 tsp. nutmeg
1 3/4 c. raw honey
3 eggs
1 c. vegetable oil
1/4 c. orange juice
2 1/2 c. grated apple
1 1/2 c. walnuts, chopped
Raisins as desired

Sift together dry ingredients. Add honey, eggs, oil and juice; mix well. Fold in apples, nuts and raisins. Spoon into greased and floured angel food cake tube pan and bake at 325 degrees for 1 1/2 hours or until top springs back when lightly pressed. Serve with a dollop of whipped cream or plain.

APPLE CAKE 4

1 1/2 c. vegetable oil
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 c. sugar
3 eggs
3 c. cake flour
3 c. raw apples, chopped

Beat eggs with oil and sugar. Add flour, sifted with other dry ingredients; mix well. Add apples. Mix well. Bake in tube pan for 1 1/2 hours at 325 degrees.

APPLE CAKE WITH HOT SPICED TOPPING

–CAKE:–

2 c. sugar
1/2 c. shortening
2 eggs
4 lg. apples, cored, unpeeled & grated
2 c. flour
2 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

–TOPPING:–

6 tbsp. margarine
2 c. water
3 tbsp. cornstarch
1 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla

CAKE: Cream sugar and shortening together; mix in eggs. Stir dry ingredients together and add alternately with grated apples, mixing well. Bake in greased 13 x 9 inch pan at 350 degrees for 40 to 45 minutes. Serve warm with warm spice topping. TOPPING: Melt margarine in saucepan; add water. Stir dry ingredients together in a bowl and add to saucepan, cooking and stirring constantly until thick. Remove from heat and stir in vanilla. Pour over individual servings of cake and serve warm.

Apple Cake

Apples:

½ cup granulated sugar
3 tbs. cinnamon
4 large tart apples, peeled, cored and thinly sliced

Cake:

3 tbs. vegetable shortening, for greasing the pan
3 tbs. flour, for dusting the pan
3 ½ cups flour
1 ½ cups granulated sugar
2 tsps. baking powder
½ tsp. salt
¾ cup canola oil
4 eggs, beaten
¼ cup orange juice
2 tsps. vanilla extract
¼ cup confectioner’s sugar for sprinkling

Preheat oven to 350 degrees F.

Grease a 10 inch tube pan and dust it with flour, taping out the excess over the sink.

• In a big bowl, combine the flour, sugar, baking powder and salt.
• Stir with a wooden spoon and mix them up, and make a well in the center.

• Inside the well add the eggs, oil, orange juice and vanilla.
• Using a wooden spoon stir the wet ingredients into the dry ones until the mixture forms a batter.
• Spoon 1/3 of the batter into the prepared pan and smooth the top with a spatula, and add half of the apple mixture to this.
• Repeat the layers and end with the batter.
• If the last bit of batter doesn’t quite cover the apple smooth the top with the spatula and coat the apples with some of the batter.
• It will turn out fine.
• Put the cake in the oven and bake it for 65 to 70 minutes or until a knife inserted into the center comes out clean.
• If the top appears too brown too fast just cover it with some foil – shiny side down – laid loosely over the pan.
• Remove the pan from the oven and put it on a wire rack.
• Using a knife loosen the cake from the sides of the pan and release the sides.
• Invert the cake on to the rack and let it cool for several hours.
• Sprinkle with the sugar and serve.

DIABETIC APPLE CAKE

2/3 c. oil
5 tbsp. sugar substitute
1 egg
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 1/2 c. flour
1/2 c. raisins
1/2 c. water
1 1/2 c. chopped apples

Mix all ingredients. Pour into a lightly greased 9 x 9 inch pan. Sprinkle with nuts. Bake at 350 degrees for 30 minutes. Makes 16 servings. You can substitute carrots, bananas and pumpkin for the apples. All works well, can also be made into cupcakes.

1 c. oil
2 c. sugar
2 eggs
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
1 tsp. vanilla
2 1/2 c. sifted flour
1 tsp. cinnamon
1/2 tsp. nutmeg

3 c. raw apples

Beat oil, sugar and eggs together. Add dry ingredients and mix well. Stir in nuts and apples. Pour into 9 x 13 inch ungreased pan. Bake 1 hour at 300 degrees. Frost only if desired. Light dusting of powdered sugar is nice.

FRESH APPLE CAKE 2

1/2 c. salad oil
2 eggs
2 tsp. soda
2 c. flour
4 c. chopped apples
2 c. sugar
1 tsp. salt
2 tsp. vanilla
1 c. chopped nuts
2 tsp. cinnamon

Prepare apples, sugar and cinnamon in large bowl and set aside for 4 hours. Add oil. Add eggs, 1 at a time. Sift flour, soda and salt together and add to apple mixture slowly. Beat well after each addition. Fold in nuts. Add vanilla. Bake at 300 degrees for 1 hour.

–TOPPING FOR CAKE:–

1 stick margarine
1 c. sugar
1 sm. can evaporated milk

Boil 5 minutes. Poke holes in cake and pour over cake while warm.

FRESH APPLE CAKE 4

1 c. Wesson oil
2 c. sugar
2 tsp. vanilla
2 eggs
3 med. tart apples, thinly sliced or
grated
1 c. chopped nuts
1 tsp. soda
1/2 tsp. salt
3 to 3 1/4 c. flour
1 tsp. cinnamon

Mix together Wesson oil, sugar and vanilla. Do not use mixer. Next mix in eggs, thinly sliced or grated tart apples and chopped nuts. Stir in soda, salt, flour and cinnamon. Bake in greased and floured bundt pan for 1 hour at 350 degrees. Take out after it cools and sprinkle with confectioners sugar.

FRESH APPLE CAKE 2

Mix first 5 ingredients and set aside. Mix dry ingredients. Blend with apple mixture. Pour into greased pan and bake at 325 degrees for 1 hour.

APPLE CAKE

1/4 c. butter or margarine
1 egg
1/4 tsp. soda
3/4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. sugar
1 c. flour
2 c. apples, chopped
1/2 c. nuts, chopped

Mix all together. Put into 8 x 10 or 9 inch square pan. Bake at 350 degrees until done, about 45 minutes. My husband’s grandmother gave me this recipe when we were married 40 years ago. The original recipe called for butter the size of an egg. You may double this for a 9 x 13 inch pan. Needs no frosting.

FRESH APPLE CAKE

Beat together oil, sugar, eggs and vanilla. Add apples, and set aside. Sift together flour, salt, baking soda, powder and cinnamon. Add dry ingredients to apple mixture. Mix well. Add coconut. Spread into a greased and floured 9 x 13 inch pan (or two 8 x 8 inch pans). Bake at 350 degrees for 35 to 40 minutes. Cool in pan. For individual cakes. Divide mixture by filling 18 to 24 cupcake/muffin tins 3/4 full. Use paper liners. Bake at 350 degrees for 30 minutes.
