Pineapple Date Nut Topping
1 cup drained pineapple bits (13 ½ ounce can)
1 cup pineapple syrup from the can plus water
1 tbs. cornstarch
2 tbs. brown sugar
½ cup diced dates
½ cup chopped pecans
1. Drain can of pineapple tidbits, reserving syrup.
2. Add water to syrup to make one cup.
3. Combine cornstarch with brown sugar in a saucepan.
4. Stir in the liquid and cook, stirring, until the mixture thickens and clears.
5. Remove from the heat: add pineapple, dates and nuts.
6. Serve warm or chilled on ice cream, puddings or cake
