Wow Red Bread

1                cup  tomato juice — at room temperature
1            package  Eagle Mills Best Loaf White, Italian,
or French bread mix
3/4           cup  sliced hot peppers

Pour one cup of warm tomato juice (room temperature) into bread machine
pan.  Empty Eagle Mills Best Loaf White, Italian, or French bread mix into
bread machine pan on top of the tomato juice.  Pour contents of Red Star
yeast packet into bread machine pan on top of mix.

Add the 3/4 cup sliced hot peppers to the dough at the second knead cycle.
If using canned or pickled peppers, drain all liquid before adding to
machine.

Winter Vegetable Bread

Add all ingredients, except carrots and beets, to the bread pan in the

Note:  This is a very dry dough so be sure and add extra water to achieve
the correct consistency while mixing in machine a little at a time.
Remember the beets will add some moisture.

Cut beets in chunks rather than small pieces.  The beets help add moisture
when added during the first knead but will disintegrate in the dough and
no red flecks in bread.

Whole Wheat Thin Pizza Crust

3/4           cup  water
1         tablespoon  vital wheat gluten
1/2      teaspoon  salt

2        tablespoons  olive oil
2               cups  whole-wheat flour
2          teaspoons  bread machine yeast

Place all of the ingredients in your machine in the order recommended by
your machine’s manufacturer.  Select the dough cycle and press start.  You
may need to add some more flour (1 tablespoon at a time) if the dough is
too wet or more water if the dough is too dry (1 tablespoon at a time).

Preheat your oven to 500 degrees for at least 30 minutes.  Grease the
pizza pan with olive oil or pan spray.  If using a peel and stone, dust
the peel with cornmeal to prevent the pizza from sticking.  While the
dough is rising, prepare your toppings and grate your cheese.

After the dough has risen one time, roll it out on a lighly floured or
cornmealed surface or hand stretch until a nice circle is formed.  It may
never be a perfect circle but that is just part of homemade pizza.  Dust
the dough with flour or cornmeal only as needed to prevent sticking.  Lay
the dough on your prepared pan or peel.  Pull the dough up around the
edges of the pan so that a slight lip is formed, and crimp the edges.

For a thin crispy crust, place your toppings on the pizza and bake
immediately.  For a thicker, chewier crust, allow the dough to rise for 15
to 30 minutes.  The longer the rise, the thicker the dough.  Place your
toppings on.  You should place sauce first, followed by cheese, meat,
vegetables and seasonings.  You should also leave 1/2-inch untopped border
around the crust.

Place the pizza on the bottom rack of the oven or directly on the pizza
stone and bake until the crust is golden brown and the cheese has melted.
This should take 10 to 15 minutes.

Comments:  High elevations may make dough rise faster.  If recipe does not
work as is, decrease yeast by 1 teaspoon at a time.  You may have to
increase water; start with 2 tablespoons.  Addition of gluten will help
the structure of the bread, add 1 teaspoon per cup of flour.

You may freeze the baked breads; cool before wrapping in plastic wrap,
place in plastic bag and seal.  Bread may be frozen up to six weeks.  Thaw

* Note:  SPROUTING WHEAT BERRIES — Two to three days prior to making this
bread, place 1/3 to 1/2 cup wheat berries in a sprouting jar (or any glass
jar with cheesecloth tied down with a rubber band).  Cover with water and
allow to sit overnight (at least 12 hours).  Drain and rinse again, right
through the screen or cheesecloth, and set the jar mouth-side down at a
45-degree angle in a warm, dark place.  Rinse sprouts twice a day.  They
are ready for use when you see small sprouts of about 1/8 to 1/4 inch.
The sprouts should not be any longer than the berry itself.

machine’s manufacturer.  Select the Basic/White cycle and press start.

White Bread

1 1/4           cups  lukewarm milk
3               cups  all-purpose flour
1 1/2    tablespoons  white sugar
1 1/2      teaspoons  salt
2        tablespoons  butter or margarine
2          teaspoons  active dry yeast

Place ingredients in the pan of the bread machine in the order suggested
by the machine’s manufacturer.  Butter should be in corners to avoid
contact with yeast.  Set at basic loaf and desired crust.

When done, place on wire rack for at least 10 minutes before slicing.

1           teaspoon  caraway seeds

Combine the vinegar and the milk.  Let stand for at least 15 minutes or
until the mixture thickens.

Add the vinegar mixture, brown sugar, egg, butter, salt, molasses, bread
flour, baking soda, caraway seeds and yeast in the order directed by your
bread machine’s manufacturer.

Set machine to basic cycle (fruit bread, white bread, etc depending on
your bread machine), medium crust setting.  Add the raisins when indicated
to by your bread machine’s manufacturer.

Alternately this bread can be mixed in the bread machine and then bake in
the oven.  Set bread machine to dough setting.  Remove dough, shape into a
loaf, cover and let rise in a warm place, until just under doubled in
size.  This will take about 1 hour.

Bake the bread in a preheated 375 degree oven for 30 to 45 minutes.  Bread
will golden brown and sound hollow when thumped on the bottom.

Place desired dough ingredients in machine and program for knead and first

Preheat the oven to 500 degrees with the rack in the center position.
Turn 17- by 11-inch pan upside down.  Spray with vegetable cooking spray.
Cut dough in half and cover remaining half with a clean towel.

Place the other half on the prepared pan and use rolling pin to roll the
dough evenly to the edge.  Have a friend hold the pan or place a wet towel
underneath.  Spread with sauce and sprinkle with cheese.  Bake for 8 to 10
