Chai Tea
Masala Spice Mix:
1 Cinnamon stick
3 Cardamom, pods
2 Black peppercorns
2 Cloves
1/2 teaspoon ground ginger
1 cup water
1 teaspoon sugar
1 teaspoon Darjeeling tea leaves
1/4 tablespoon Masala Spice Mix (above)
1/4 cup milk
1. Grind cinnamon stick, cardamom, black pepper corns, and cloves to a powder.
2. Stir in ground ginger.
3. Combine water, sugar, tea and 1/4 teaspoon spice mix in a pan and bring to a boil. Simmer for one minute.
4. Add milk, bring to a boil and simmer for 3 to 5 minutes.
5. Strain into a mug or teapot.
