What is Espresso?
The word espresso comes from the Italian words caffé espresso which literally means pressed-out coffee. Espresso is brewed by forcing very hot water under high pressure through coffee that has been ground to a consistency between extremely fine and powder. This process extracts a very flavorful concentrated coffee beverage. In Italy, good espresso is defined by the “four Ms” – Miscela, Macinazione, Macchina, Mano. These four words loosely translates to: blend of coffee beans, the grinding process, the machine, and the person making the espresso.
Espresso was developed in Milan, Italy in the early 20th century, but up until the mid-1940s it was a beverage produced solely with steam pressure. A simple espresso machine uses a pot, a filter, ground coffee and a spout. The as water in the pot is heated pressure builds inside the pot, and the
only way for it to escape is up the spout, through the coffee and out of the spout in the top. Since the end of the spout is under water, the pressure forces the hot water up through the spout. Modern day espresso machines have really caught on since the invention of the spring piston lever machine. This machines commercial success changed espresso into the beverage we know today. Starbucks has taken espresso production to a new level and the market continues to grow each year.
How does Espresso Differ from Coffee?
So what makes espresso so much different than regular coffee? For starters it has a thicker consistency than standard drip coffee. It also contains a higher amount of dissolved solids than drip coffee per relative volume. And probably the most noticeable thing when you pay $6 bucks is that the serving is much smaller. Espresso is usually measured in shots, which are between 25 and 30 ml (around 1 fluid ounce) in size. Espresso is also chemically complex and somewhat volatile, with many of its chemical components quickly degrading from oxidation or loss of temperature. Just by looking at it, the most distinguishing characteristic is “crema”. Crema is the reddish-brown foam that floats on the surface and is composed of vegetable oils, proteins and sugars. Crema has elements of both emulsion and foam colloid.
Because of the high pressure brewing process, espresso tends to be a very highly concentrated “shot” of coffee. While there can be significant variation, on a per-volume basis, espresso contains approximately three times the caffeine content of regular brewed coffee. In most cases, 1 shot of espresso will have about half the caffeine of a standard large coffee. For this reason, it has become the base ingredient for other drinks, such as lattes, cappuccino, macchiato and mochas.
Which type of coffee beans is used to make espresso?
Contrary to popular belief, there is no specific coffee bean type or roast required to make espresso. Remember, espresso is made from the process, not the bean or blend. Typically, espresso is made from a blend of beans that can be roasted ranging between dark and light. Depending on the consumer, the blend chosen is purely a decision on taste. Commercial espresso makers like Starbucks go with a darker roast of beans to produce their traditional flavor.
What the heck is a Barista?
Barista is the Italian word for bartender. So an expert operator of an espresso machine is considered a barista. Starbucks uses this term to refer to their counter staff and thus the term has gained popularity in the U.S. A “home barista” is one who enjoys making espresso at their home.

Basic Smoothie Ingredients

Juice – Orange juice serves a great base for a sweeter smoothie. Apple juice and grape juice can also be used as well. If you are using milk or yogurt as a base, adding a little orange juice can help give it a sweet taste, and could even replace using a sweetener or sugar in your smoothie. Using a tomato juice or another vegetable juice can help add even more nutrition and flavor to your smoothies!
Tofu – Adding a little tofu to a smoothie is a great way to get a low fat, good for you, protein in your diet. Combined with the soy milk you could easily net 6 grams of protein in ONE smoothie. No need to worry about the taste, most of the time the tofu just blends in with the flavors of the smoothie.
Ice – Use ice in your smoothie if you are wanting to make your smoothie thicker. Ice is also great for getting that frothy smoothie texture.
Sweetener & Salt – Using sweetener and a pinch of salt can really make the flavors of your smoothie more distinct. Try to keep the salt to a minimum, only use a pinch of it or to taste - until the flavors stand out and are more distinct.
Honey - Honey is another great way to add a little sweetness to your smoothie.

About Barbecue Sauce
What would grilling or barbecue be without barbecue sauce? Either slowly cooking into the meat in a barbecue, or forming a thick tasty glaze on grilled food, outdoor cooking just would not be the same without a good barbecue sauce.
Barbecue sauces vary from region to region, and from chef to chef. If you go to North Carolina, you’d find a thin, vinegar based sauce, soaking into the thin shreds of pulled pork. In Kansas City, they like their sauce thick and sweet. If you go to Texas, you’ll find a thinner sauce than you’d find in Kansas City, and less sweet.
Barbecue sauces are usually categorized according to their base. Sauces can be based on ketchup, tomato sauce, mustard, vinegar, even mayonnaise. Depending on the base, and the preference of the cook, they can be thick or thin, sweet, sour, spicy, mild, or any combination.
A basic sauce consists of several elements, each adding another layer of flavor and complexity to the sauce. First of all is the base, as stated above, that can be tomato sauce, ketchup, mustard, vinegar, or mayonnaise. Or if you want to experiment, you can try something different. The next element is the sweetener. Usually, this is brown sugar or molasses, but you can also use fruit juice, or any other sweet flavor. The sweetener helps to take the edge of of the next flavor… sour. Lemon juice and lime juice can be added for a sour tang, or vinegar will do the trick. Aromatics, herbs, and spices add another layer of flavor to the barbecue sauce. Onion and garlic are common aromatics.
You can buy sauces at the store. You’ll probably find at least a dozen brands and flavors at your local grocery store. But nothing beats a good homemade barbecue sauce. If you want to create your own barbecue sauce, it isn’t hard. Just choose your base, and the rest of the flavors that you want, and start experimenting. A good barbecue sauce will have a balanced blend of flavors to it, sweet, sour, smoky, spicy. Just add a little bit of each ingredient at a time until you get the blend that you want. You can always add more, but you can’t take away, so just add a little bit at a time. Feel free to experiment with your sauce, people have added coffee, cola, cherries, and other ingredients that you wouldn’t think to find in a barbecue sauce. If you want, you can buy a sauce at the store, and then doctor the sauce with your own additions, to suit your own tastes.
A quick note on storage. You can store the barbecue sauce in a sealed container in your refrigerator for a few days. If you want to keep the sauce longer than that, you’ll need to learn some canning techniques, to sterilize the food and containers, and properly process the sauce.
How you use the barbecue sauce depends a lot on the sauce itself. Most barbecue sauces can be used at the table as a dipping sauce for food. But different types of sauces are used differently in cooking. Thin sauces can be used as a marinade for the meat before grilling, and can also be applied during the cooking proces. Thicker sauces, especially those with a lot of sugar should not be applied to the food until the last few minutes of cooking time, or they could burn. If you are doing a true barbecue, however, cooking the meat slowly for a long time, you can get away with putting some of the sauce on the meat at the beginning of the cooking time, as the lower temperature would be less likely to burn the sauce.
A good outdoor cookout just isn’t the same without a good, flavorful barbecue sauce. Get in the kitchen, and whip up a batch, and brush it on your steaks or chicken for an element of flavor that just screams barbecue.

Cooking a Baked Potato is Not as Boring as it Sounds
Baked potatoes have been a popular side dish for many years. Besides being baked, the versatile potato can be boiled, slow cooked in a crock pot or fried. But, baking remains one of the most popular ways of cooking a potato.
Potatoes are baked in either a conventional oven or a microwave. They can also be baked in foil in a barbecue grill.
Choose the potatoes you use for baking wisely. They should be firm and have no wrinkles or stems growing from the eyes. Select potatoes of medium size; all potatoes should be (close) to the same size and shape. This will make sure the potatoes are all finished cooking at the same time.
To bake in a conventional oven:
1. Preheat your oven to 450°F.
2. Scrub all dirt from potatoes and dry thoroughly.
3. Poke holes in each potato to allow steam to escape.
4. Rub oil on potatoes before baking. This will keep moisture inside the potato and make the skin a bit crispy. Some people may want to eliminate this step.
5. Put potatoes on baking sheet and bake for 50 to 60 minutes, or until tender when pierced with a fork.
To bake in a microwave oven:
1. Wash potatoes and dry thoroughly.
2. Poke holes in potatoes to allow steam to prevent them from exploding in the microwave.
3. Cook for 10 to 15 minutes, depending on how many potatoes are put into the oven.
4. Potatoes should be allowed to stand for 5 to 10 minutes to finish cooking.
To serve a baked potato:
1. Slice each potato in half.
2. Squeeze each half from both ends to loosen the potato from the skin.
3. Top your completed masterpiece with your favorite topping: Butter, broccoli and cheese, bacon or sour cream are all delicious toppings.
Here’s a recipe for a fancier main dish that is suitable for company.
Tuna Stuffed Potatoes
(Serves 4)
Ingredients:
4 hot baked potatoes
1/2 cup hot milk
2 green onions, minced
1 egg
2 Tablespoons butter or margarine
1 teaspoon salt
Dash of cayenne pepper
1 medium tomato, diced
1 can (7 1/2 oz.) tuna, drained
2 Tablespoons grated Parmesan cheese
Parsley for garnish
Instructions:
1. Cut a thin slice from one flat side of each potato. Scoop out the interior into a bowl. Mash, adding the hot milk; whip until fluffy.
2. Add the green onions, egg and butter, whipping mixture well. Season with salt and cayenne. Fold in tomato and tuna.
3. Pile this mixture back into the skins, mounding it high (shells will be heaped up almost 3 inches higher).
4. Sprinkle with Parmesan cheese
5. Place on baking sheet. Bake at 400°F for 10 minutes or until heated through.
Here are a few more tips that will help:
* Use a muffin tin to hold potatoes upright for even baking.
* You can cut baking time in half by skewering with a “potato nail.”
* Cook extra for hash browns for tomorrow’s breakfast.

Traditional Chicken Enchiladas
INGREDIENTS
For the sauce:
3 tbsp. all-purpose flour
1 tbsp. chili powder
1/2 tsp. paprika
1/4 tsp. ground cumin
1/2 tsp. ground oregano
Pinch of dried thyme
Pinch of black pepper
1/4 tsp. garlic powder
1/2 tsp. onion powder
3 1/2 cups vegetable stock
1 tbsp. chopped fresh cilantro
1 tsp. honey
1 tsp. fresh lime juice
1 tsp. salt
For the enchiladas:
1/2 cup minced onion
12 oz. cooked chicken breast, diced
1 tsp. dried oregano
1 tsp. chili powder
1 cup vegetable stock
8 corn tortillas
4 oz. low-fat cheddar cheese, shredded
4 oz. shredded green-leaf lettuce
PREPARATION
In large sauté pan combine flour with dry herbs and spices and cook over medium heat until golden brown. Add remaining ingredients for sauce and whisk to combine. Bring to boil, reduce heat to low, and simmer 45 minutes, stirring frequently to prevent scorching.
Lightly coat medium sauté pan with canola oil and sauté onion, chicken, oregano, and chili powder until chicken is lightly browned. Add vegetable stock and simmer until liquid has evaporated.
Preheat oven to 350°F. Soak 1 tortilla briefly in warm water; lay on flat surface, and spoon 3 tablespoons chicken filling inside one edge. Roll tightly and place in 8-by-8-inch baking pan. Repeat. Ladle sauce on top and sprinkle with cheddar cheese. Bake 15 minutes or until cheese melts and sauce is bubbly. Garnish with lettuce. Or even try serving with salsa on the side. Serves 4.
PERSONAL NOTE
Serving with homemade salsa is a great idea. You can add the colors and flavors you want with each serving. Not only is this for aesthetic reasons. In fact, changing the ingredients in your homemade salsa is a great way to insure you get more of the taste combination you need for your favorite dishes.

About Chardonnay
The most popular white wine grape that is found around the world is the Chardonnay grape. It is Just a Matter of Taste: Choosing a Fine Wine
If you think it is difficult to choose a fine wine for your self or as a gift you are not completely wrong, buying such a wine is something you need to do some research for.
