English Independence Day BBQ Cooking
It all started over two hundred years ago with oppression and taxation by the British crown and ended up with a war. I am not sure why the American nation chooses to celebrate its separation from the British on July 4th but as a barbecue enthusiast I can really see the benefits.
Being a native of the country that lost the war of independence I look at our national holidays and wonder what I have done to deserve the dates we have. I guess the closest we come is St Georges day and that is in April. Have you ever been to England in April? Well if not, let me tell you that it is wet, overcast and usually blowing a gale so in general an all round misery and not conducive to a barbecue. Maybe that’s the reason why we do not celebrate our national saints day the same way that other countries do. Then let’s look at the other big celebrations:-
Easter – in March or April so generally the same weather as St Georges Day
Christmas – December can actually be a very peaceful month but still pretty cold for a BBQ
I hear so much about the Independence Day BBQ and what a great event it is that I am really jealous, it seems completely logical to me to have a national holiday at the height of summer and make an excellent opportunity for a party. So just needing any excuse to light the barbecue why not celebrate the fact that we lost the war in 1776? After that of course the only dilemma left to settle is what to cook?
In England we have the added confusion of the terminology because an American will call an English barbecue, a grill, and what an Englishman calls a meat smoker in America is called a barbecue pit. This makes some traditional barbecue smoker recipes difficult for an Englishman to do albeit I have got around this by investing in a Kamado ceramic barbecue but if an Englishman really wants a low cost method to indirectly cook then it’s got to be a large gas bbq grill that has at least two burners. I this way the food can be cooked over a drip tray on one side of the Barbie whilst on the other side the heat is applied to the coals.
So what do I cook? It is only right that an Independence day BBQ should be packed with the all American taste so for me it has to be a pulled pork recipe and / or a barbecue ribs recipe. Long slow cooking basted by a sugary viscous mop and a few soaked wood chips to complete the flavour – fantastic! It is always important to let the meat rest after the cooking process as this seals in the juices and during this time it makes perfect sense to be grilling that bbq appetizers. I go for some barbecue fish recipes because generally they are really quick to cook and offer a completely different flavour to the main course.
For dessert it has to be a blueberry pie but at the moment I have not been able to work out how I can do this on the barbie. I’ll keep trying and in the meantime I continue to send my thanks across the pond for a great summer party feast.

Fried Chili Chicken: Recipes to Die For!
When it comes to delicious meals, you can have healthy too! Today more than ever, delicious foods are geared at providing healthy benefits in a scrumptious dish that will be a favorite for years to come. Fried chili chicken is a delicious blend of healthy chicken spiced to perfect without the unnecessary additions of added fat or sugar.

Fried Chili Chicken
Ingredients:
2 tbsp flour
¼ tsp cayenne
1 tsp chili powder
½ tsp ground cumin
½ tsp dried oregano
½ tsp garlic powder
½ tsp salt
4 chicken breasts, cubed
3 tbsp vegetable oil
1 onion, chopped
2 cups chicken broth
¼ cup chili powder
1 tbsp hot New Mexico chili powder
1 tsp ground cumin
1 tsp dried oregano
20oz can pinto beans, drained
Directions:
In a plastic bag: mix the flour, cayenne, chili powder, cumin, oregano, garlic powder, and salt and toss together. Add the chicken cubes and shake until evenly coated with the spice mixture.
Heat 2 tbsp of oil in a large skillet and cook the chicken, turning as needed until chicken is lightly browned, set aside. Heat the remaining oil in the same skillet and sauté for 5 minutes. Put the chicken & onion mixture in a large saucepan with the chicken broth.
Add all remaining ingredients – except pinto beans – bring to a boil, reduce heat and simmer for 1 hour (add water if needed). Add the beans, taste and adjust seasonings if needed.
Tip: this is a hot temperature chili! Hard crust country bread, thick sliced, lightly sprinkled with oil and toasted or grilled is all you’ll need with this spicy chicken chili.
Dry soup: many Mexican dishes feature bread or tortillas that are soaked in a sauce until the dish resembles more a casserole or a heavy stew than a soup. In Mexico, they refer to these dishes as dry soups.
Canned or fresh peppers: with the ever growing interest in Mexican cuisine across the USA, you will likely find be able to find fresh chilies to meet the needs for your cooking. However, if you must use canned, plan to use about half as much as you would of fresh because the peppers become more packed during the canning process.
When I make this for my family, I try using more goodness by using fresh peppers toasted to perfection. In addition, you will find it is easy to make pinto beans in the Crockpot while at work. This is a great way to insure you are not getting added sodium from canned beans. Also, I can choose the herbs and spices my family loves. You can, of course, find your own!

Five Pepper Chicken Stew
Ingredients:
4 chicken breasts
4 fresh jalapeno peppers
4 fresh mulato peppers
4 fresh ancho peppers
1 fresh poblano pepper
4 fresh habanero peppers
4 medium tomatoes
1 large yellow onion
4 garlic cloves
4 medium baking potatoes
2 large carrots
½ cup hulled pepitas (pumpkin seeds)
Directions:
Remove skin and bones from chicken breasts and cut into one inch cubes. Remove the stem & seeds from the peppers and chop into ¼ inch pieces (please wear gloves when handling peppers), as well as the tomatoes and the onion. Remove skin from garlic cloves and slice thinly. Peel the potatoes & carrots and cut into one inch pieces. Combine all the ingredients in a large, thick pot and cook on medium low for three hours.
Beware: this will clean your sinuses!!
Tip: If the local market does not have the varieties of peppers listed above, experiment with variations available to you. This recipe uses very hot peppers.

Jalapeno peppers are usually green, but sometimes red. Moderately hot, with an immediate bite.
Habanero peppers are also known as Scotch Bonnet, they are the hottest commercially grown pepper. They are generally green, red, orange, or yellow in color.

6 Seafood Grilling Tips
Grilling season is here. You’ve got your grill full of gas, you’ve stocked up on hamburgers, hot dogs, and steaks, and you’re ready to go. But those hamburgers, hot dogs, and steaks are getting old fast. You’d like to try something else for a change. If you’re looking to change up your usual grilling menu, why not try seafood? Fish makes a healthy meal, and grills up quite easily. Seafood does present some grilling challenges, however. These tips should help you on your way to grilling great seafood.
1) Make sure your grill is clean and oiled. Fish sticks to the grill very easily, so proper lubrication is essential. If you don’t oil your grill, the fish will stick, and break apart when you try to remove it. Grab a wad of paper towels, or a rolled up kitchen towel in a pair of tongs. Dip the paper towels or kitchen towel into some vegetable oil, and rub the oil onto the grill. You can also spray the grill with cooking spray, just be sure the grill is off when you do this, or the spray could ignite, injuring you.
2) Use fresh fish if possible, since it is easier to work with than frozen fish. Each serving should be about 6-8 ounces for fillets or steaks, and 8-12 ounces for whole fish.
3) You can place fish directly on the grill, but if you do this, you should use a firm fleshed fish, like grouper, tuna, swordfish, or salmon. You can also buy grill baskets made for grilling seafood. These will help small pieces of fish from falling through the grill, and will help in grilling delicate fillets.
4) Cook the fish over medium-hot to hot heat. If your grill doesn’t have a thermometer, then hold your hand about 5 inches above the heat. If you can hold your hand there for 2 seconds, the temperature is hot. If you can hold your hand 5 inches from the heat for 3-4 seconds, it is medium hot. If you’re cooking whole fish, you’ll need to have the temperature a bit lower, so the fish won’t burn. You should plan on cooking the fish for about 10 minutes for every inch of thickness. The fish is done cooking when it is opaque, and begins to flake. It is better to undercook the fish a bit than overcooking it. You can always cook it some more if it is undercooked, but you can’t uncook it if it is overcooked.
5) Marinades are a good way to add flavor and moisture to the fish before cooking. You only need to marinate fish for 30-60 minutes. If you marinate the fish for too long, the acids in the marinade will start to cook and break down the flesh. Lean fish should also be basted during cooking to keep the fish from drying out. Fattier fish, like tuna and salmon don’t need basting, but you can baste them to add more flavor.
6) Shrimp, Scallops, and chunks of firm fleshed fish work well on skewers. Alternate chunks of seafood with chunks of vegetables on a skewer for great seafood kebobs. If you’re using wooden skewers, be sure to soak them for 30 minutes before grilling to prevent them from burning on the grill.
It isn’t hard to grill seafood, but it does take some practice. Follow these tips for grilling seafood, and expand your grilling repertoire. It’s a great break from hamburgers, hot dogs, and steaks.

Due to an increasing awareness of nutritional issues, salsas have become the best selling condiment in North America. This is largely because they are low in cholesterol, fat, and calories and because they provide a great way to add flavor to even the dullest of dishes.
Salsas are traditionally spicy and vegetable based and can be cooked or uncooked, but there are many variations of salsa. With only 45 calories per serving, onions are fat and cholesterol free, very low in sodium, high in vitamin C, and a good source of fiber and other key nutrients. Onions contain generous amounts of a flavonoid called quercetin. Other sources are tea and apples, but research shows that absorption of quercetin from onions is twice that from tea and more than three times that from apples. Studies have shown that quercetin protects against cataracts, cardiovascular disease, and cancer.
Garlic is a tasty addition to any salsa and the aromatic seasoning that people either love or hate. It’s been said that if garlic had been created in the laboratory instead of by nature, it would probably be a high-priced prescription drug. That’s how really good it is. Medical studies have shown that garlic can lower cholesterol, prevent dangerous blood clots, reduce blood pressure, prevent cancer, and protect against bacterial and fungal infections.
Jalapeño Peppers are a good source of vitamin C, folate and vitamin A but are not the only pepper that can be used in salsa. Here are some examples of different peppers that can be used and they are ranked from mild to hot.

Fourth of July Grilling Recipes Kids Will Love
Fourth of July marks the high point of summer and is often celebrated with an outdoor barbecue. Don’t limit yourself to the good ole American menu of hamburgers and hotdogs. There’s lots more to grilling than that. The first task is deciding on a menu that offers something for everyone. If yours is going to be a family affair then take the kids’ preferences into consideration.
Mini burritos are easy and quick. Fill a small flour tortilla with a tablespoon of cooked hamburger, shredded chicken, or sliced steak. Add a slice of tomato, a tablespoon of shredded cheese and roll up burrito fashion tucking in the ends so you end up with a nice little package. Grill for a minute or two on each side to heat up the meat and melt the cheese and there you have it. Serve with an interesting salsa of chopped grapefruit, cilantro, onions, jalapeno peppers, and jicama for the adults to munch on as appetizers until the main course is ready. If you don’t like grapefruit substitute seedless watermelon.
Most kids love fish sticks so why not serve fish tacos? Brush mild boneless fish fillets like halibut or tilapia with a marinade of lemon juice, minced garlic, minced onion, and a touch of cumin. Grill until the fish is cooked through but not over cooked. About 5 minutes per inch of thickness of the fillet. Cut the fillets into about 4 inch by 2 inch servings. Cover with foil and set on the back of the grill to keep warm, in a warming drawer, or in a 200 hundred degree oven. Set up a taco bar with corn and flour tortillas, toppings of tomatoes, sliced onions, cheese, shredded cabbage, sliced jalapenos, salsa in both mild and hot varieties, cucumbers, chopped cilantro, sweet red peppers, cooked corn, black beans, and pinto beans. Consider putting a sign with a flame and the word HOT in front of any topping that you feel might be too spicy for children.
Your guests including the little ones will have a great time building their fish tacos. If you’re not sure everyone will like fish, grill some boneless chicken breasts as an alternative.
Serve a grilled and raw veggie platter with several dips. Try some new vegetables you might not have thought about grilling such as carrots, endive spears, cherry tomatoes, broccoli spear slices, or summer squash slices. Toss the vegetables with a marinade of olive oil, citrus juice, garlic, and herbs for at least an hour before grilling. Use bottled Italian salad dressing if you’re in a hurry.
Echo the marinade flavors in the dips you offer. Mix some Italian salad dressing in a cup of cottage cheese add 1/4 cup of parmesan cheese, extra chopped fresh basil and whirl in the blender until smooth.
A quick citrus dip is simply sour cream with lemon, lime, and orange juice. Add a teaspoon of grated citrus peel to boost the flavor with some freshly grated pepper.
Grilled fruit kabobs make a great dessert for both children and adults. Cut peaches, plums, pineapple, in one inch chunks, add seedless grapes and halved apricots. Thread fruit on a short wood skewer and brush with lime juice. You can do all this ahead. The lime juice will keep the peaches from turning brown. Grill over a low fire until grill marks are barely visible. Remove from the grill and brush with a glaze made from equal parts honey and lime juice.
Your little guests will be happy and satisfied until the fireworks start.

Tips For Cooking With Wine
Wine can be an essential ingredient. It can enhance the meal, not only by drinking it with the meal, but as an integral part of the food itself. The French cooking sauces, beurre rouge, and beurre blanc both contain wine. Both French and Chinese cooking make use of wine as an ingredient, as well as many other types of cooking. Wine can be used as an ingredient in sauces, soups, marinades, and more. It combines well with other flavors and ingredients, such as vinegar, fish paste, soy sauce, and many others.
There are questions that people have in cooking with wine. You yourself may be tentative about using wine in your cooking. Well, here are some answers to some common questions about cooking with wine.
Is the cooking affected by the wine quality?
The quality of the cooking is definitely affected by the quality of wine. Cooking with wine, tends to concentrate the flavor, since the alcohol evaporates out, leaving the flavors. You’ll want to use a good quality wine, but you also shouldn’t spend $100 for a bottle of wine for cooking. You can find some good wines for under $20 that will work just fine for cooking. In general, you don’t want to cook with a wine that you wouldn’t drink.
What about the alcohol content of the wine?
Most but not all of the alcohol will evaporate during the cooking process. Since alcohol evaporates at 172 degrees F., most if not all of the alcohol will be gone by the time the food is done cooking. Also keep in mind, that most recipes do not call for a lot of wine, so there would not be very much alcohol in the first place. Even if you don’t drink wine for personal reasons, then you should be safe using it for cooking.
What if I put too much wine in my dishes?
Don’t put too much wine in. If you’re using a recipe, just follow the recipe, and don’t add more wine than it calls for. If you think the recipe calls for too much wine, then you can simply use a little bit less wine. If you’re experimenting with your own recipes, start with a little bit of wine, and add more as needed. Add a little bit of wine at first, and let the recipe cook. Taste it, and decide if it needs more wine. If so, then add some, if not, then don’t. If there is not enough wine in a recipe, you can always add more. If there is too much, you can’t remove it.
Is there a difference between cooking wine and regular wine?
Yes, there is a difference. Cooking wine contains salt and chemicals that make it okay for cooking, but not for drinking. Some recipes call for cooking wine. In this case, go ahead and use it. For the most part however, you should use regular wine. As stated above, you shouldn’t cook with a wine that you wouldn’t drink. In most cases, regular wine will work much better than cooking wines for your recipes.

The Importance of Family Meal Planning

Pop, Popper Your Popcorn Maker
Popcorn maker that is also called popcorn machine is a device used to pop popcorn. It was usually found in movie theaters, amusement parks and carnivals.
During early years there were no popcorn makers, Indians made popcorn by heating sand in a pan and then they put the kernels on the heated sand. Many years later, Charles Creators was the first person to invent the mobile popcorn machine, which is also known as the popcorn maker cart in 1893 in Chicago, Illinois. This machine made it easy for the people to sell the popcorn on the streets and on the amusements parks, which spurred the popularity of popcorn.
The first popcorn maker was steam driven which The Food Service Equipment Division patented in 1885. It allowed the popcorn to be popped in oil, and then later, they had a gas powered popcorn vendors. People began selling popcorn using this machine on the streets, in front of the amusement parks, stores and theaters to attract people to buy popcorn. Percy Spencer from the Raytheon Manufacturing found a way to mass-produce magnetrons to produce microwaves and with this technology, it gave Spencer the idea to make a microwave oven and he used kernels for his experiments. In 1940’s, it allowed the people to make popcorn in their own homes using the microwave; you can enjoy eating popcorn even if you are not on the amusement parks or in cinemas. The Food Processing System divisions grant the exclusive right to market the hot air fluidized bed oven to produce high amounts of popcorn that in 1967.
Today, people are buying old-fashioned popcorn makers to cook delicious popcorn in social events or for one’s own pleasure at the comfort of one’s home. People want to purchase popcorn maker because they may need to make more than cooking a few bags of microwave popcorn. Owning a popcorn machine would be fun for a family and friends to spend some quality time together while watching your favorite programs on TV or movies. Popcorn makers have different types and brands but today, most popcorn makers were run by gas or electricity. Most people usually buy red popcorn machine because it gives out an old fashioned and traditional look to the first ones that were made in the late 1890’s and 1900’s. The Components of Wine - What Makes a Type of Wine Unique
To understand what makes the different types of wine unique you need a basic understanding of what goes into a wine. Most people would look at you blankly and say ‘Grapes, of course’ if you were to ask that question, but it breaks down further and it is only by understanding the basic structure and ingredients of a wine that you can develop a full understanding of what you are drinking. Needless to say, with that understanding comes a far greater appreciation of the type of wine and pleasure in drinking it. The grapes that go into a wine provide the acids, tannins and sugars which, together with the yeasts, produce the alcohol and flavor of the wine, hopefully producing a harmonious whole which has structure and longevity.
Much is made of acidity in wine, with wise nodding of heads and mutterings of about the balance of a wine, but what does it actually mean. All fruits, even the sweetest, contain acids, it is what gives them their fresh flavour, without it the fruit would seems sweet and sugary, somewhat like drinking the syrup that is used when bottling fruit. Wine also requires acidity for just the same reason. If there is too much acidity then the wine will be sharp, and very harsh in your mouth to the point of being almost undrinkable. Not enough and the wine will be syrupy and flat tasting dull and lifeless, especially if it is a sweet wine. You can detect acidity around the edges of your tongue, especially towards the front; it gives the wine a sharpness and liveliness in your mouth. Wines from cooler regions generally have a higher acidity, for example, New Zealand or northern France. Warmer countries such as Australia tend to produce wines that are lower in acidity giving them a deceptive softness which often belies the alcohol content. In fact some Australian grapes have such a low acidity at harvest that more acids have to be added to allow the wines to be drinkable and to age well. Adding acids has to be done with extreme care, volatile acids such as tartaric acid, can really lift the flavours in a wine when added in small quantities but too much makes the wine taste and smell of nail polish remover or worse.
Tannin is another one of those wine ‘buzz’ words that is little understood though much used when discussing types of wine. Tannins are chemicals that are found in the skins, pips and stalks of grapes, they are also found in tea and oak amongst other things. They are essential in a wine if it is intended to age because they act as a preservative. You can feel tannins by the sensation of puckering in your mouth, or the ‘furring’ on your teeth. Red wines, which are fermented in contact with the pips, stalks and skins have more tannins in them than white wines, this is one of the reasons why these types of wine age better and last longer. Over time the tannins mellow and the wine becomes more balanced and the puckering sensation decreases. Tannins are most important in wines that are intended to age for a long period using grapes such as Cabernet Sauvignon, Nebbiolo and Syrah/Shiraz but they are still needed in red wines that are to be drunk young to give a structure without dominating the wine or making it too harsh, young clarets or some Beaujolais wines for example. As the wine ages and the tannins soften the wine becomes more complex and interesting with flavours developing that linger in your mouth for a long time after the wine has been drunk. If the tannins in a wine are found to be too harsh when you open it, all is not lost. You can combine it with high protein or high fat foods, such as good cheese or a rich meaty dish. Alternatively (and some will view this as heresy) leave the wine overnight and drink it the next day. It will be perfectly alright and a great deal more mellow. Modern wines tend to be less tannic as they are made to be drunk relatively quickly but if you get the chance, try a wine that has some age to it and you will notice the difference. Ideally try two vintages of the same wine and you will see how tannins affect the aging process very clearly.
The sugars in wine come from the grapes and much of the skill of any winemaker is in selecting grapes that have the right amount of sugars in them to create the balance between acidity, flavour and alcohol that makes up a good wine. Grapes grown in cool climates have far less sugar as they struggle to ripen in the more uncertain weather conditions. Some types of wine may have a little sugar added either during fermentation or afterwards to enhance the characteristics of the wine. There will almost always be a little sugar left after fermentation because not all sugar compounds are subject to the action of the yeast. How sweet a wine tastes is very subjective as we all judge differently. Some wines which are very dry can still taste sweet because of the high fruit flavours which mask the lack of sweetness in the wine itself. Equally the amount of tannins and the acidity has an effect, we generally think of red wines as being dry because of the tannins but this is not always the case. There are some wonderful sweet red wines from Germany that are quite a surprise to the palate. Generally speaking however, the sweeter the wine the higher the levels of residual sugar, a very dry wine would have as little as 1 gramme per litre, whereas a Sauternes might have as much as 250 grammes per litre.
The other factors which affect wine are more ‘external’ such as the type of yeast that is used in fermentation, the type of barrel – Oak or other woods, or even beneficial rot such as Botrytis. All types of wine contain these basic components, but the overriding factor in the flavour will always be the grape or mix of grapes, from which it is made. All wine lovers have their favourites and will seek out new wines containing them like searching for treasure. There is only one judge of how good a wine is, and that is you. However all these components are put together, if you like it, it is a good wine.

Tasting Wines is a Fun and Delicious Learning Experience
You’ll learn about and come to appreciate wine and the craft of winemaking. Learning how to taste wine engages several senses at once; sight, taste and smell beginning with these senses and expanding your knowledge and appreciation outward from these will have you tasting wine like a professional very quickly.
There are countless unique scents to be detected in wine, but taste is limited to just four elements (sweet, sour, salty and bitter). The senses of smell and taste work in conjunction to let you experience flavor.
Here’s How:
Look:
Examine Color and Clarity. Pour wine into a glass. Have a close look at the wine; tilt the glass (away from, not towards you) and look at the color of the wine, looking from the edge to the middle. For this it is useful to have a white tablecloth, piece of paper or other white background so that the color can be assessed better.
So what color is the wine? You need to think past just red or white. Is it purplish, brick red, garnet, maroon or some other shade if it is a red wine? If a white wine, is it straw-colored, greenish, pale yellow, almost clear or golden in color?
Still Looking: Next, evaluate the clarity (or opacity) of the wine.
Is it translucent? Opaque? Is the wine clear or cloudy can you see any sediment in the glass? You can better check this by giving your glass a gentle swirl this will reveal anything floating in the wine. A younger wine will have more sediment than an older one; older reds especially tens towards a translucent character.
Smell:
The sense of smell is a crucial element in tasting a wine. To best assess aroma, you should again gently swirl your glass, which will release the aromas of the wine. Take a quick sniff and evaluate.
Still Smelling: Next, put your nose into the glass, but not into the wine, and inhale the aroma deeply. What do you think now? What do you smell? Oak, floral notes, fruit scents such as citrus; perhaps even tobacco or vanilla are all common elements of the aroma of a wine. Swirl again ad give it another quick sniff.
Taste:
I know you’ve been waiting for this step; patience is a part of learning how to taste wines, however. Take just a small sip and roll it around your tongue. You will now assess three parts of the taste of wine attack, evolution and finish.
Attack refers to the first impression made upon your palate by the wine. There are four elements to the attack phase: tannin, acidity, alcohol content and residual sugar content. These are the things which come together to create the part of flavor which is sensed by your palate.
The four elements should be balanced, with one not being too overwhelming when compared to the other components. Together, these four elements create the sensations of complexity, intensity and the mouth feels creamy or crisp, sweet or dry, but not flavors as such like fruit or spice flavors.
Next is the Evolution Phase, which is also known as the middle range or mid-palate phase. This is where the flavor as such develops on the palate. During this phase, you can experience the flavor of the wine.
A red wine may reveal fruit flavors at first, such as cherry, plum or fig, as well as spice flavors like black pepper and clove, even woodsy flavors like oak.
In a white wine, the Evolution Phase will have you tasting fruit flavors like apple, pear or citrus, floral flavors or even herbs, honey or butter (especially in malolactic fermented wines).
The Finish comes last, as the name suggests. The finish is how long the flavor lasts in your mouth after you have swallowed the wine. Aftertaste is a big part of this phase. Did the aftertaste last in your mouth just for a moment, or for several seconds? Was it light or heavy in body The sensation of being like water or heavier such as cream. Can you still taste it at the back of your throat? Does it leave a bitter aftertaste or do you want another sip right away? Most importantly, what was the last impression the wine left: was it wood, spice, fruit or something else?
After tasting your wine, write down what you thought of it. All in all, do you feel favorably about the wine? Did it tend towards bitter, sweet or sour? Was the acidity of the wine well balanced with the other elements? What foods did it go well with? Would you drink this wine again? If you did like the wine, write down the name of the wine, the producer and year of vintage so that you can find this wine again.

Food Safety Tips When Grilling
Food safety precautions begin while you’re still at the grocery store. If you plan on spending a lot of time at the grocery store that day, purchase the meat last, right before you are ready to check out, so it can remain as chilled as possible for the trip home. While shopping pick up a few of the handiwipes that are offered to wipe off the handles of the shopping cart. Use them to wipe off your hands after you’ve picked up chicken, pork, or fish.
If you live in a hot climate place the meat, frozen vegetables and diary items in a cooler for the ride home. This is especially important if you plan on completing another errand, such a picking up the kids at swim club after shopping. Even with the air conditioner the back seat can start to get warm. Keep in mind none of the air conditioned air reaches the trunk.
Meat should be refrigerated immediately when you get home, in the coldest part of the refrigerator or in the meat compartment. If you purchase frozen beef, it should be defrosted overnight in the refrigerator, not a room temperature. The same goes for chicken or turkey. If the poultry is large, over 15 pounds, you can jump start the defrosting by immersing the still wrapped turkey in the bathtub or large kitchen sink filled with cold water. Don’t use hot. The hot will raise the outside of the turkey to unsafe levels while the inside still is frozen. After an hour remove the poultry from the water and let it finish defrosting in the refrigerator.
Remember to wash your hands before and after you handle raw meat or poultry. In the kitchen, don’t use the same work surface, cutting board, etc. to get the raw meat or poultry ready for the grill as you do for other foods. If more than one person is in the kitchen during the prep stage, make sure you coordinate with them so you know which utensils and which surfaces have come in contact with raw meat or poultry.
Trimming excess fat from meat can help avoid flare-ups during the grilling process. This can have three benefits: leaner meat is healthier for you and your guests, a flare-up can potentially burn and ruin the dinner you’ve so carefully planned and prepared, and can be dangerous for the outdoor chef as well. The risk being burned while grilling can also be lessened by using long handled tongs and spatulas.
If you are grilling other items along with the meat, make sure they do not come in contact with the meat while it is in a raw state. Give the meat and the other items their own separate zones on the grill. Use separate tongs or spatulas to handle these items. When the meat is ready to be removed from the grill, put it on a fresh, or freshly washed, platter and use a fresh set of tongs or spatulas to handle it. Make sure you wash all utensils, cutting boards and your counter tops after they have come in contact with raw meat or poultry.
It is also important to refrigerate leftovers from grilling promptly. Don’t leave them on the counter top, at room temperature, for very long after you have finished eating.

How to Grill With Marinades: Tips on Grilling
Marinating meat before grilling helps tenderize it and adds wonderful flavor. Tenderizing agents often used in marinades include acidic ingredients such as vinegar, lemon juice, lime juice, yogurt and even wine. Fresh papaya, ginger and pineapple contain tenderizing enzymes, and they add exotic flavors as well. Marinades are wonderfully versatile flavor enhancers for the outdoor chef. The marinade recipes you can come up with are only limited by your imagination. You start by selecting your acid or tenderizing ingredients, and add additional ingredients. Popular choices include herbs (oregano, thyme), garlic, shallots, brown sugar or honey, soy sauce, cumin, black pepper, chili powder, Worcestershire sauce, tomato paste and mustard.
You can also take something you already have in the refrigerator, such as standard Italian salad dressing, and build additional flavor through adding fresh herbs like cilantro, or spicing it up with chili powder.
Timing is important to get the most out flavor out of your marinade. Marinating for too brief a time doesn’t allow the flavor of the marinade to penetrate the meat. Overlong marinating time results in softening the texture of the meat too much. Here are some guidelines:
Tender beef cuts can be marinated for as short as 15 minutes, or up to 2 hours. These include Porterhouse, top loin, tenderloin, ribeyes, top sirloin. Less tender cuts need to be marinated at least 6 hours or as long as overnight. These include flank, skirt, top round, and chuck shoulder steaks. If you marinate longer than 24 hours, the surface texture of the meat can be softened more than you want. Meat with a mushy texture when you cut into it is not what you’re striving for.
For tender cuts of beef–Porterhouse, top loin, tenderloin, rib eyes, top sirloin—the marinade will do its job in as little as 15 minutes, or you can go as long as 2 hours with the marinating process. Less tender cuts need substantially more marinating time, at least 6 hours or preferably overnight. Flank steak, skirt steak, top round and chuck shoulder steaks all benefit from longer marinating.
You should marinate the food in the refrigerator, never at room temperature. Never reuse a marinade. It should be discarded after you remove the meat from it. Some marinades do make great sauces to serve with the dish. But do not use the marinade that has been in contact with the meat. Simply reserve some of the marinade for use in the sauce, and use the rest as the marinade.
The goal of marinating is to have the liquid in contact with as much of the surface of the meat as possible. If you are using a food-safe plastic bag for marinating, make sure that it is a fairly tight fit over the meat, so the marinade will be forced over more of the food’s surface. Similarly, it you prefer to use a nonreactive container like a glass dish, make sure it is large enough so the meat can lie flat, but again is a tight enough fit so the marinade will be in contact with as much of the meat as possible. It’s a good idea to turn the plastic bag over several times or turn the meat in the dish, in order to have uniform exposure to the marinade.

Which is why I’m writing today about Out Door Cooking Accessories. These will vary from a bucket of damp sand to quench the final flames to very long tongs, at least 12 inches is the minimum - and Oven gloves – the kind that don’t just cover your hands, but also go right up your arms.
Those are obvious choices, as are camp cookers, barbecues, plates and cutlery but here are some things you may not have considered:-
Grill Gauge – if you use propane gas for your camp fire you will know how annoying it is to run out of gas. And you can’t tell how much is in the can by shaking it – the gas weighs almost nothing and the can weighs a ton. Use the grill gauge to tell you, before you are miles from the nearest store, whether or not you have enough gas left.
A meal cooked at night is perhaps best of all. A Camp Fire Chef’s Light fixes on to your stove and means that you can see when the food is cooked without relying on the moonlight.
Storm lighters mean that you can ignite the fire even in horrid conditions if you are that desperate for a meal.

There have always been really strange recipes around that are passed from kitchen to kitchen until they fade and a new fad takes over. Usually they are perfectly edible, they may even taste quite good, but at least one ingredient is strange or used in a peculiar way.
Bacon Mugs
I found a version of this on Stumble. The resulting mugs make great containers for salads, rice etc. Use small ovenproof dishes upside down. These you cover with foil pressed well down. These you cover with bacon. I t is best if you cross two rashers over the upturned base and then wind one or two more rashers in and out to make a bacon basket. Cook these on a baking tray to catch drips. How long they take to become crisp will depend upon the bacon and your oven. A hot oven is best, but may produce some smoke. The bacon will shrink of course, but removed carefully from the foil after cooling and they should keep their shape. I must try this with vegetarian bacon, but these crisp up really quickly so keep a careful eye on them. Another idea might be to create a basket in a long, shallow dish.
Carrot Jam
This comes from a Second World War time book, so is really old. The fact that the recipe has survived this long must mean that it is worth making. Next time I make carrot cake I will split it and spread it with some of this. I cannot give quantities as it depends upon how much mashed carrot you have.
Wash and peel your carrots. Chop them small and boil in slightly salted water until soft. Drain and sieve or chop finely in a food processor. To one pound of this pulp add on pound of sugar , 1 teaspoon of powdered ginger and the juice and grated zest of a lemon. Boil all these together as when making any other jam. Pot when it begins to get thick.
Rose Petal Jam
My darling Granddad would allow me to pick his precious roses to make this. Some petals, especially white ones need trimming at the end where they join the flower as this part of the petal can produce a bitter taste.
2 mugs of rose petals packed fairly tightly, 2 ½ mugs of sugar, 2 mugs of warm water, 2 tablespoons of honey, 1 teaspoon of lemon juice.
Cut the petals into ¼ inch strips. Cover with the water and cook for about 10 minutes. Strain this, reserving the petals, and use the liquid to make a syrup with the sugar and honey. Boil and then simmer for 5 minutes before adding the petals once more. Then cook on the lowest possible flame for about 40 minutes– an asbestos mat helps with this recipe. Add the lemon juice and cook for a further 20 minutes. Pour into sterile pots and seal. Some would want to add a little colouring, but I am a purist and never do.
Jelly Fruit – Americans would probably call these Jello Fruit.
I remember these as a great treat at birthdays when I was a child. Somehow eating the jelly from out of a fruit shell made it taste better – at least in my imagination.
Each fruit will give you 4 portions. Halve your oranges. Remove all the flesh taking care not to damage the skins. Place the dry skins upright on a tray, or better still balance them in muffin tins which means that they stay upright more easily. Make up your jelly/jello a little thicker than normal and pour into the empty shells as full as you can as it shrinks a little when it sets. Place the tray in fridge and let set. Then cut each half shell once more so that the orange shell is now in quarters which make them much easier to eat. All you have to do now is to think of something to do with all that orange flesh. Now that my family is grown I wonder if it will work as jelly shots?

Wine Tasting - 4 Simple Steps
Tasting wine is more complex then simply drinking. Wine tasting is about more than hydration. It is a whole different experience than what you may be used to when drinking. It is more like tasting food. You want to enjoy the wine and to experience the wine.
Knowing the proper way to taste wine will allow to you appreciate the art that goes into the creation of each bottle. It will also show others that you are serious about wine and that you understand the complexity of wine tasting. It also shows you have respect for the wine and for those who made it because you are doing much more than tasting, but you are taking in every aspect of the wine.
Step 1: Look at the wine after pouring it. When the wine is first poured, before you do anything else you have to look at the wine. This is best done against a plain light colored background that will allow you to see the colors and the depth of the wine. You want to look for streaks of color or subtle hints of color variations. Make a note of the coloring you see.
Step 2: Swirl the wine in the glass. Once you have looked at the wine and noted its coloring after pouring, you can swirl it slightly in the glass. Swirl enough to get the wine to coat the glass, but avoid swirling too vehemently. After you swirl you will want to look at the wine again and note the coloring changes. Major changes mean the wine is a more complex wine. No changes means the wine is a simpler wine.
Step 3: Small the wine. After you swirl the wine and note the coloring and look again you will smell the wine. Take in the aroma and look for hints of familiar smells. You want to note the things you smell for the next step. You’ll learn terms to describe each scent as you progress.
Step 4: Taste the wine. Finally you are at the part where you can taste the wine. Do not just drink and swallow, though. You should take a small amount into your mouth and swirl it around. This allows you to get the full flavor of the wine. You should then draw in a bit of air and swirl again. You should note the tastes at this time. Also see if you pick up the hints of flavor that you smelled. Now you can swallow. Be sure to note the aftertaste.
Tasting wine is not simple, that is for sure. With these four steps, though, you can master wine tasting like a pro. You will find that following the four step approach will allow you to enjoy the wine more and also allow you to
