The Italian food culture concerns not only what we see at Italian tables or in a rich Italian restaurant menu.
It is something much deeper in Italians’ DNA.
Italians have some beliefs that go beyond education or tradition.
Concerning pasta
An easy example could be the pasta shapes and their seasonings. Considering that among dry pasta (the ones you usually buy inside paper or plastic bags that last for long) the difference is only the shape of it, nothing else, the shape itself is something very important for Italians.
There’s a traditional pasta sauce recipe from Roma region called Pasta all’amatriciana (it’s a tasty sauce made with tomatoes and bacon). Usually it’s served using the bucatini pasta (kind of huge spaghetti with a hole in its middle).
An Italian woman was disgusted hearing her hairdress telling her colleague that preferred it with short pasta. She said: “Don’t ask me why. It is just as it is. Amatriciana must go with long pasta. How can one imagine cooking it with short pasta?” The same goes for pasta with oil and garlic (aglio e olio), you probably will never see it served using any other pasta that isn’t spaghetti.
Cappuccino
A lot of people around the world drink coffee and milk. In Italy, people use to drink cappuccino – a coffee and milk with addition of milk foam.
All around the world people drink coffee and milk whenever feels like doing it. Italians will never ask for a cappuccino in the evening! Why? It is just as it is. It’s not time to have a cappuccino. Cappuccino is for breakfast!
Italians do not accept someone who asks a cappuccino after, or even worse, together with dinner. They really twist their nose when they see someone doing it.
Drinking
In Italy there are bars everywhere. There are many small cities, having about 1,500 inhabitants that have about 20 bars.
It happens because drinking in Italy is associated with greetings. When an Italian meet a friend, it’s natural to “drink something together”.
If it happens to serve a drink to someone seat besides you, never turn the jar or the bottle against the natural way of your hand. For example, if you have the jar in your right hand, the glass must be on the left side, never behind, on the right side of your right hand. Otherwise it may not bring good luck.
Meals
In many countries it’s common to eat a salad as entrance.
Not in Italy.
Italians eat salad as a side plate for the second dish. Now you can find some tourist restaurants in main cities that propose rich salads for the tourists…but Italians never ask for them!
Italians respects lunch time. If you come to visit Italy and want to have lunch, pay attention to restaurants’ closing times. Usually after 2:30pm the kitchens are all closed and you’ll have to eat a sandwich. If an Italian is travelling outside Italy, he will probably look for a restaurant during lunch time. If he doesn’t or cannot find one, and finds one at 3:00pm, he’ll probably say that is not hungry anymore, that he uses to eat at that time otherwise he loses his hunger.
Italians trust their food. While most of the tourists look for local food, considering it part of the vacation, it’s very common to see Italians looking for Italian restaurants while abroad. They seem to be afraid of new and different food.
They begin to open themselves to new food when go outside Italy more often and learn to appreciate and trust foreign cuisines.
Other than trusting and loving their own food, Italians hate when people try to mix other food cultures with Italian ones. An example? Never add ketchup to a pasta dish! You cannot imagine how your Italian friend will stare at you if you try to do so.
The interesting in all these is that they don’t do it for being presumptuous, but they really believe you’re wasting your taste. Italian culture still has a lot of “musts” that go with generations that just follow it without knowing why it is done in this or that way.

Food And Drink Initiatives In Scotland - Can They Deliver?
Food issues seem to have featured high on the agenda so far in 2008. Television programmes ranging from Jamie Oliver and the plight of chickens to “Kill it, Cook it, Eat it” have all sought to highlight our production methods. Hungry for Success, the healthy eating programme in schools, is doing well at primary level but could do better at secondary level. Scotland Food and Drink, the new organisation to come to fruition as a result of Scottish Food and Drink, is going to hold its 1st national conference and if all that is not enough, Richard Lochhead the Cabinet Secretary has announced his intention of creating a National Food Policy for Scotland.
The cynic in me tells me we have seen all of this before. Endless talking shops and quangos spouting motherhood and apple pie, whilst using large quantities of taxpayer’s money and achieving very little. Multiple retailers will still ultimately rule the roost, doing essentially what they please with processors and primary producers dancing to their tune before many surrender to the exhaustion of bankruptcy, takeover or simply fade away. Government will never quite put its money where its mouth is and the hardy successful exceptions representing a minute part of the Scottish food industry will be feted as heroes with the magic solution. This will all be done against the background of blaming Brussels for all our woes and a potential credit crunch.
The optimist says fantastic; we now have a new regime that is finally going to grip all these diverse groups that together make up the Scottish food and drink industry. We have found someone to ensure a fair crack of the whip to all parts of the food supply chain. We have someone with the vision and leadership to ensure that there is a consistent supply of quality produce to sell both at home and abroad. Only Government with access to the necessary environmental and production levers can do this, especially in our less favoured areas. Only they can stabilise sectors subject to huge pressures of cost and pricing such as milk, pigs and poultry. Only they can prevent our beef and sheep sectors going into rapid decline.
It will only happen however when buyers consistently and regularly elect to buy our products and are prepared to pay more for them because they believe they are worth it, whether on quality, animal welfare, environmental or production grounds. Television programmes sensitise people to issues and cause a significant response which is then normally pretty short lived. It rarely extends to commercial sectors and the public sector is unmoved by such matters. Our vision and leadership need to embrace this education backed up with concrete examples. It needs to transcend all governmental departments; health, education, enterprise and local authorities; and what is more is that it requires genuine buy-in from those involved. It truly needs to embrace the Governments ambition and make Scotland’s food industry contribute to making a wealthier, fairer, greener, healthier, safer, stronger and smarter Scotland.

Identifying Your Favourite Types Of Wine - The Basic Principles Of Wine Tasting
There are more types of wine than we can count and how on earth are we to choose one when faced with a huge bank of bottles. Educating yourself in the wines you like is quite easy if you just make a few notes following a set pattern so that you can compare the wines you have drunk to find the ones you like best. Tasting wine is as much an art as a science and there is no right and no wrong way to do it. There is only one thing that matters – do you like that type of wine? I use a few basic pointers to help me remember the wines, for me there are four principal elements to tasting a wine, appearance, aroma, taste and overall impression.
Appearance falls into three subsections, clarity, colour and ‘legs’. Clarity - the appearance is important. Whatever its age it should look clean and not cloudy or murky. Very young reds from rich vintages can often look opaque but they should still be clear and not have bits floating around. Occasionally you can find a few tartrate crystals in the wine, red or white but this does not affect the wine and is not a fault. Colour - tilt the glass at a 45 degree angle against a white background which will show graduations of colour – the rim colour indicates age and maturity better than the centre. The colour gives clues to the vintage, generally speaking with reds, the lighter the colour the more lively the taste, fuller and more concentrated colour indicates a weightier wine. Whites gain colour with age and reds lose it so a young Beaujolais with be purple with a pinkish rim whilst an older claret will be more subdued with Mahogany tints. ‘Legs’ - you can get a hint of the body and sweetness of a wine from its viscosity. Swirl the wine in the glass and let it settle – watch the ‘legs’ on the side of the glass. The more pronounced the fuller (and possibly more alcoholic) the wine and vice versa.
The Aroma, Bouquet or ‘Nose’ of a wine is a very personal thing but should never be neglected. Always take a few seconds to smell a wine and appreciate the variety of scents that will change as the wine warms and develops in the glass. Smell is the most important element in judging a wine as the palate can only pick up sweet or sour and an impression of body. Flavours are perceived by nose and taste buds together. Swirl the wine to release the aromas and stick your nose deep into the glass taking a few short sniffs to get an overall impression, too much will kill the sensitivity of your nose. Young wines will be fruity and floral but an older wine will have more of a ‘bouquet’ sense of mixed fruits and spices – perhaps with a hint of vanilla, especially if it has been aged in American rather than French oak.
Taste is combination of the senses and will change as the wine lingers in your mouth. The tongue can only distinguish four flavours, sweet on the tip, salt just behind the tip, acidity on the sides and bitterness at the back. These can be changed by temperature, weight and texture. You may think it looks silly but ‘chew’ the wine for a few seconds taking in a little air which allows the nose and palate to work as one, hold the wine in your mouth for a few seconds to get an overall impression and only then swallow. Some wines will attack your taste buds - the first impression, and then follow through after swallowing. Some, particularly New World wines are very up front, while others have an almost oily texture (Chardonnay and Gewurztraminer) as they have low acidity. With reds you will pick up tannins (dependent on the oak barrels as well as the grape) on the back of the tongue. If the wine is young and tannic it will feel like your teeth have been coated. Tannins help the wine age well but can sometimes be a bit harsh unless the wine is well balanced.
Overall impression and aftertaste are often not given enough importance by the some of the Wine ‘gurus’ – for the rest of us it is what matters most! Cheaper or younger wines will not linger on the palate, the pleasure is ‘now’ but over quickly. A fine mature wine should leave a clear impression that persists for a while before fading gently. More important still is balance, one that has enough fruit to balance the oakey flavours for example, or enough acidity to balance the sweet fruits so the wine tastes fresh. Equally a wine which is very tannic with no fruit to back it up as it ages is unbalanced.
The most important thing, however, is to enjoy a wine. A few seconds spent tasting a wine before diving into the bottle can greatly enhance your pleasure – and you will have some idea of what you are drinking and what types of wine you to look for when you go shopping!

Why Go Organic? Part 4 - Preserve Ecology
Organic farming is as close to what Mother Nature intended as possible. Did you know that the soil is an ecosystem in and of itself? In organic farming, you feed the soil so it will in turn feed your plants. Farmers who have pledged to go organic do not use synthetic fertilizers or pesticides to grow their vegetables and fruits. Instead, they make use of compost for fertilizer and also use a cover crop that is tilled into the soil to add nutrients, also known as green manure. They control any pests and also keep the soil productive by rotating their crops and using mechanical cultivation practices. This keeps any chemicals from finding their way into the air that we breathe, helping to cut down on air pollution.
No chemical fertilizer also means healthier soil. Good soil attracts worms, and worms attract other animals, some of them helpful predators which will further reduce the need for any sort of chemical additions. The amount and variety of chemicals added to produce grown in a non-organic manner is truly staggering.
The buildup of chemicals over a period of time is very detrimental to the condition of agricultural soil. Vital nutrients that are necessary for growth of the plants and are also normally present in our vegetables and fruits are crowded out by this buildup, resulting in produce that is lacking in vitamins and minerals. Also, these toxic chemicals can slowly leach out of the soil and into our municipal water supplies; polluting them and making the water unfit to drink. This means more people buy bottled water, and our landfills are cluttered with the empty bottles! These take forever to break down, and are becoming a real problem due to their sheer volume. Organic farming is helping to rebuild healthy soil in our country. It helps to keep topsoil erosion in check, and also protects our groundwater. This in turn will help our water supply return to normal as the contaminants are filtered out naturally and with manmade devices.
Our organic farmers believe strongly in working with nature and not against it. Nature provided our soil with microbiotics, which make the soil fertile and can be considered as a natural fertilizer. When chemical fertilizers are applied to the soil, this kills off the microbiotics. Organic farmers prefer to fertilize their crops in a different way. First of all, they feed their animals a natural food which contains no hormones or antibiotics. The animals consume this feed, and the farmer takes their manure, which still has around 75% of the original nutrients, and returns it to the soil. This feeds the soil and help to keep the macrobiotic process going.
Conventional agriculture takes the nutrients out of our soil at a rate that is up to 80 times faster than nature can replenish it. Too much soil depletion would mean that we would be eating vegetables and fruits with almost no natural vitamins and minerals other than the synthetic ones added to make up for the loss. Organic farming helps the foods we eat to retain their nutrition while at the same time allowing the all important soil to remain sustainable so that we can continue to enjoy nutrition the natural way.

Kamado Bbq Smoker Lies
Over Christmas I bought a Big Green Egg. I read all the marketing blurb in the brochure and it captured my imagination, I’ve already written about how good it is and published some kamado barbecue recipes but I was still intrigued to find out more about the origins of such a versatile piece of cooking equipment. I wrote an article about it but since publishing it, I’ve done more research and found that some of my original findings may have already been creative in their origins.
My preliminary research on the internet and found out that it’s origins lay in clay cooking pots from China that were later adapted by the Japanese a few hundred years ago. The end result was the Mushikamado and looking at photographs on the internet it’s pretty clear that this part of the story is clear cut.
Where things become a little less clear is in the 1960’s when the kamado as we know it today arrived in the USA. There’s a lot of published work that refers back to Richard Johnson, a man who founded the Kamado company that it was he who brought the kamado to the USA and also it was he that first called it a kamado and patented the name. Further research leads me to believe that some of these points are not true.
The first point is that kamado is in fact a real Japanese word and not one made up by Johnson. The word kamado actually is part of the Japanese language and means stove, and to further the point there are also many derivations of the word in the Japanese language:-
Yukikamado - A pot with a stove attached that could be carried around
Tsukikamado - Another word for the stove, constructed with stones, tiles, and clay.
Magatamagata kamado - A large range with polished black tops, a base, and a stoke hole in a curved or horseshoe plan with as many as eleven cooking holes.
Ishikamado – a steel rice cooker that is inserted into a stone frame.
Niwakamado - A temporary cooking range set up in the earth floored area of houses from the first to the third of January as part of the New Year festivities.
Kamadodono - A building with a hearth or cooking stove.
Koujinsan-no-kamado - In some districts, such as Saga prefecture, a large cooking range mainly used for special occasions.

The second claim made by Johnson is that he trademarked the word kamado, but careful investigation at the US patents and trademarks office has proved this claim to be untrue as well.
So who should we believe and do we really care? Looking around at how many businesses use the word kamado and the evidence above about how well utilized the word is in the Japanese language it would appear that some of the claims made by Richard Johnson may well be considered good marketing rather than a statement of fact. Having said that, I’m thoroughly enjoying cooking on my kamado all year round, I’m excited about the results that I get when using it either as a barbecue grill or a meat smoker and all the smoker grill recipes I use are contributing to the factual proliferation of the internet.

Rice and corn will give your beer its own color and body, oatmeal on the other hand will give your beer a smoother texture. If you are after a more dark and rich tasting beer then you should try out some malted barley that need to be brought to a high temperature. If its a stout you are going for than use a lot of almost burnt malt barley.
There is of course one ingredient that is right up there next to malt when it comes to importance and that is yeast. Without yeast there would not be a brewing process. Without yeast you would end up with a very flat beer that would not taste nice and would not have the fizz and buzz you would expect in a beer. There are different types of yeast you can buy and the choice of yeast also is an influence on the flavor of the beer. There are yeast types in a liquid culture that would give your beer an interesting taste but you have to keep in mind that you can’t keep a liquid yeast culture in storage as long as a dry culture. Also, there are enough type of dry yeast cultures to keep you going in your quest for the perfect beer taste.

When we talk about “The art of fine cooking” some people get a bit confused about what this means. They think it has to do with the fact that fine cooking will taste better then their own cooking but that not is really true. Fine cooking has a lot to do with presentation, how food looks on the plate it served on. Yes it should taste good as well but that is not the same as saying that it tastes better then a home cooked meal. Have you ever wondered if you would be able to cook like those chefs in those highly acclaimed restaurants? Maybe someone even suggested to you that you should visit a culinary school and start taking lessons. Or take a look on the internet if you can find any good tips and recipes but you also need picutres with those then we are talking about the art of fine cooking and that means something for the eye as well.
If your ultimate goal is to find employment in a restaurant that does fine cooking then a bit of cooking and trying out at home will not be enough. Then you should find a good culinary school and attend classes there and finish with a diploma. Have a plan for other employment in the back of your mind because getting a job in the restaurant business will not be easy. You don’t want your talent and time invested in learning the art of fine cooking wasted in a stuffy kitchen at a road diner or some buffet were no one appreciates what you can create. If you can’t find a job the moment you graduate from school and don’t want to relocate then do something completely different so you won’t get disappointed about the profession.
Amateur or professional, when you get the change to show your talent you should do it. Be it for friends and family or for guests in the restaurant you cook for people will appreciate the effort you put in creating a dish that not only makes the taste buts sparkle but also is a pleasure for the eyes. As the Winery Advisor, I visit hundreds of California tasting rooms each year collecting information to prepare detailed winery profiles for the California Winery Advisor.com website (http://www.californiawineryadvisor.com). We document the wine tasting experience by cataloging the amenities, ambiances, tasting fees, pricing and wines. And, yes, we like our job.
With over 2000 wineries in the state, competition for the winery visitor is keen. Establishments now frequently outfit their tasting salons with five-star styling and lavish amenities. Even smaller operations may offer horse-drawn vineyard tours, custom bottle blending programs and high quality events and hospitality.
I have to admit I like tasting wine in tasting rooms. It’s largely about the wine of course, but the people, the setting, the stuff to do, perhaps the vibe in the room and being out in the countryside also play their part.
The tasting room staffs are generally delighted to see me, ready to answer my questions even though they have been answering them all day, and for five dollars will pour me wine in a glass that I sometimes get to keep. On top of it they usually invite me to join their special club or join them for a dinner (with a hundred other like friends). How can I not like this?
For those who don’t have the good fortune to visit all the tasting rooms, I submit The Advisor Tasting Room Personality Profile. It might even offer a virtual tasting room opportunity for you. After visiting almost 600, I have found they fall roughly within five categories. Each has its special advantages.
1. Family Run Wineries. The winemaker and family do 90% of the work, from growing grapes, making wine, selling, marketing, writing the newsletter and pouring in the tasting room. They stock shelves, wash glasses, lead tours and generally look a bit tired at the end of the day (and often well before).
These wine stops have the advantage of letting you talk directly to the players who have created the stuff we so desire. Tasting rooms are generally smaller, with fewer crowds and less pressure to join their club. They are good for individuals, couples and small groups. It is best to call for an appointment if your group is over six people.
At Milat Vineyards in Napa Valley the owners are two brothers, Bob and Mike. Their wives, Carolyn and Joyce, do the back room work and manage the tasting room, switching off every other week. At nearby Corison Winery, Cathy Corison makes the wine, while hubby William Martin, who designed the winery, keeps all the equipment humming, does the books and keeps the computers online. Husch Vineyards in Anderson Valley has been in the business for years with second and third generations still working the harvests and pouring in the tasting room.
2. The Big Personality winery is dominated by an owner whose name is frequently on the label but has a hired hand making the wine. The big personality is the big draw. They are generally self-made men and women who are leaders in the industry. They are often great company and provide a great tasting room experience.
Wine clubs at these wineries frequently have waiting lists or tiered club benefits where you wait months or years to move up to get the prized wines. Amenities usually include good picnic areas interesting gift shops, VIP tasting programs and unique tours and events. These wineries can usually handle larger groups, but it is always best to call ahead. The Paso Robles region’s Big Personalities include, Gary Eberle of Eberle Winery, Tobin James of Tobin James Cellars and Justin Baldwin of Justin Winery.
3. The Hip & Stylish wineries are set up like trendy restaurants or private nightclubs. Italian tile, exotic wall coverings, pendant lighting, couches, leather chairs, flat screen monitors, eclectic gift items and lots of cool vibes abound. They may have private dining rooms and special VIP tasting rooms.
Great customer service usually prevails along with good facilities for hanging out. They may have a bocce ball court, fireplace or lavish gardens. Some may have a private chef making gourmet treats from their pizza oven or hold evening wine tasting seminars and VIP events. For these wineries, bring friends you want to impress and keep the kids at home. Check out Tolosa Winery in San Luis Obispo, Melville Vineyards in Santa Barbara County, or Stryker Sonoma Winery near Geyserville.
4. The Destination Winery entertains its visitors and promotes its brand with summer music series, festivals, grand parties and regular weekend events. Come for the Show, Stay for the wine! They often have restaurants, park like settings, sculpture gardens, impressive art galleries, guest houses, children’s playgrounds, tram rides, shopping, and yes, even wine.
Rodney Strong Vineyards in Sonoma, Castoro Cellars in Paso Robles and Thorton Winery in Temecula have outdoor summer Jazz concerts. Wente Brothers in Livermore provides visitors a first class restaurant, wine caves, music and even a round of golf.
Some of the latest entrants to this group use their winery as their sole marketing tool, selling wine only at the winery and online. Examples include Roblar Winery in Santa Ynez, Black Stallion in Napa and Villa Toscano in the Sierra foothills.
5. The Something Special Winery offers a unique twist to its wines, winery or tasting room. Sonoma’s Ridge Lytton Springs Winery and San Luis Obispo’s Claiborne & Churchill Winery uses rice-straw bales, earthen plaster and recycled lumber for their facilities. Frog’s Leap uses solar and geothermal power and their tasting room is made from reclaimed lumber and low-toxin paint. Bonny Doon Vineyard, Benzinger Family Winery and Quivira Vineyard & Winery grow their grapes use Biodynamic farming practices. Clautiere Vineyard near Paso Robles has one of the most outrageous tasting rooms described as an artistic cross of “Edward Scissorhands meets the Mad Hatter at the Moulin Rouge.”
Other wineries specialize by producing just one wine. For instance, Silver Oak Cellars makes great Cabernet Sauvignon, while Cardinale Winery in Napa excels with their Cabernet based blend.
And for the latest trends in tasting rooms?
A Wine Bar can offer a tasting experience that an individual winery cannot: tasting multiple wineries from one wine tasting. Wine bars are growing in popularity, opening across the wine country regions and even in non-wine country locales. What I enjoy about a wine bar is trying more wines more quickly. Perhaps this is the equivalent of “10 minute dating” mixers for the wine connoisseur, which to some might be defeating the purpose. But, to the wine enthusiast with a hip and fast-paced urban lifestyle, wine bars can be an interest addition to the wine tasting experience.
The Virtual Wine Tasting Room is something that only a dot-com internet junkie could come up with. But, for those wineries putting most of their wine tasting room experience into selling on the web, this idea might become more popular. One website, Tastoria.com (http://www.tastoria.com/tastingevents.cfm), is putting an emphasis on how wine can be enjoyed and the HUMOR and FUN of the wine tasting experience. I enjoyed watching some of their tastings online, although I’m still not quite certain I could actually TASTE the wine myself!

Different Cooking Variations And Cultures
Cooking is the act of fixing food for consumption by the application of some form of heat. There are a wide range of methods for preparing food and many tools and a myriad of ingredients to flavor the food and make it more digestible in some cases. It is the process of putting together a palatable set of ingredients in such a way as to achieve a delectable and delicious culinary delight. Many factors that affect the final outcome include the types of ingredients, cooking utensils, and the skill of the person doing the actual cooking.
The styles of cooking vary greatly worldwide and they all reflect the nutritional, agricultural, cultural, socio-economic, and religious considerations that have a direct impact upon those styles of cooking.
When one uses heat to cook a food, the heat usually, though not always, changes it; which changes the flavor, texture, appearance, and nutritional value of the food. There is archaeological evidence of food items that had been roasted, both meat and vegetable matter, in the human campsites dating from some 700,000 to 800,000 years ago. Other methods of cooking such as boiling foodstuffs with water in a container made of skins or clay have been practiced at least since the 10th millennium BCE.
There are many ways, or methods, of cooking food. Baking is the technique of cooking the food in a oven with dry heat. You can also bake small loaves or cakes in hot ashes, or on hot stones. Many old-timers used to bake bread in a ‘dutch oven’. It consisted of a cast iron skillet with a lid or a cast iron ‘dutch oven’ pot and lid.
You sat the ‘dutch oven’ on amongst the hot coals of a fireplace and covered the top with hot coals as well. Baking is primarily used for the preparation of baked goods like bread, cakes, pies, etc. Such items are sometimes referred to as “baked goods,” and are sold at the bakeries which made them. A baker is a person who makes baked goods as a profession. You can also use an oven to bake a turkey or ham for holiday dinners, or to make baked beans or scalloped potatoes.

This form of cooking makes sure you never overcook or burn food; both of these common occurrences are easily avoided when steaming your food. This is especially true with vegetables and rice dishes. Health conscious folks usually prefer steaming to other methods of cooking which sometimes require cooking with oil, butter, or some form of fat.
Steaming uses no oil or other fats resulting in lower fat content in the final preparation. Steam cooking also gives more nutritious foods than boiling because much fewer nutrients are leeched out into the water, which is usually thrown away, or destroyed by overcooking.

How To Make Your Own Sundried Tomatoes
Nothing perks up a meal like the taste of sun dried tomatoes. What many people do not realize is just how easy it is to make your own sun dried tomatoes in the comfort of your own kitchen. With summer time and tomato season just around the corner, now is the time to plan for making enough sun dried tomatoes to last the entire year.
Go to your local farmer’s market and look for plum tomatoes. You can buy them by the Bushel and then, you can decide just how many you would like to dry. Make sure you get the plum tomatoes since they produce the best end result. Keep in mind that they will shrivel into almost nothing, so the more you use the more you have in the future. What looks like a lot of tomatoes will fit into a quart-size zip top bag! This is why they are so expensive in the super market.
Start by pre-heating your oven to 200 degree F. Wash the tomatoes, and slice them about 1/4 inch thick. You don’t even have to peel them. Lay the slices out on the baking sheet, making sure not to touch sides. Place in the oven, and WAIT! This can take anywhere from 6 to 10 hours, but baking them faster will ruin the consistency and the flavor. Periodically check the tomatoes, as sometimes the tomatoes around the edges of the baking sheet will bake faster than the ones in the center of the baking sheet. Rotate positions, if necessary, to keep appearances uniform.
You will be able to tell your tomatoes have completely baked when they have the consistency of fresh raisins. If they are undercooked they will be too wet and sticky; if they are overcooked they will be dark brown and dried out. QUICK & EASY FRIED CHICKEN WITH SUNDRIED TOMATO CRUST
INGREDIENTS:
2 lbs. boneless chicken breast (pounded or sliced to 1/8″ thickness)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup seasoned breadcrumbs
5 sundried tomatoes (not in oil)
2/3 cup freshly grated Romano cheese
1 1/2 teaspoons of dried basil
1/2 teaspoon of salt
2 eggs - beaten in a small bowl
PREPARATION:
Preheat oven to 425 degrees. Combine breadcrumbs, sundried tomatoes, Romano cheese, basil and salt in a blender. Blend on high speed for about 1 minute or until dried mixture is smooth. Pour contents into a large resealable bag. Melt butter and olive oil in large skillet. Dip each piece of chicken in egg mixture to coat. Place 1 piece of chicken into bag and shake to coat. Fry each piece about 1 minute per side until light golden brown. Remove from pan and place on lightly sprayed baking sheet. Do this for each piece until all chicken is coated. Bake for 15 minutes.
